Water by feel, not by schedule
The huge leaf area makes fatsia look thirsty, and it is the plant people most often overwater. In the ground, in shade, with a mulch on top, an established plant may go a whole season without any watering at all except in genuine drought. The soil under a canopy stays damp far longer than open ground, and roots sitting in permanently wet cool soil rot rather than grow.
The reliable test is your finger, pushed two inches (5 cm) into the soil under the mulch. Damp means wait. Dry at that depth means water thoroughly, a full can or two so the water reaches the whole root plate, then leave it alone until it is dry again. Little and often is the worst pattern, because it keeps the surface wet while the root ball stays dry underneath.
In a pot the rhythm is faster and the same test applies. Water until it runs freely from the base, empty the saucer, and wait until the top two inches are dry. In winter, when the plant is barely growing, cut the frequency by half or more. Winter overwatering in a cold pot is the single most common way container fatsias are killed.

Feeding: less than you think
A fatsia in decent garden soil with an annual mulch of compost or leaf mold needs no fertilizer at all. The mulch feeds it slowly, holds moisture and keeps the surface roots cool, which is exactly the combination the plant grew up with. Applying a high-nitrogen feed on top of that produces the opposite of what people want: long stretched internodes, soft growth that scorches and flops, and a plant that goes leggy years earlier than it needed to.
Container plants are the exception because every watering leaches nutrients out of the drainage holes. One application of a balanced slow-release granular feed as growth starts in spring covers the whole season. If the plant is in a pot it has outgrown and you cannot repot, a monthly dilute liquid feed through spring and summer is the fallback, stopped entirely from mid-autumn so the plant hardens before cold weather.
Yellowing that is uniform across old and new leaves alike is a light or water problem, not hunger. Yellowing confined to the newest leaves while the older ones stay dark, especially in a pot with alkaline tap water, points to iron shortage and responds to a chelated iron drench.
Keeping the leaves glossy
The gloss is the whole point of this plant, and it is mostly a matter of not damaging the leaf surface. Leaves are held for two to three years before they yellow and drop, so any scorch, dust or scale damage stays visible for a long time. There is no product that restores a damaged leaf; you wait for it to be replaced.
Indoors and in dry city air, wipe the upper surfaces with a damp cloth two or three times a year, supporting each leaf from below with your other hand. This removes the dust film that dulls the shine and, more usefully, forces you to look at the undersides where scale and mealybug start. Leaf shine products clog the pores and are not worth using on a plant whose natural surface is already reflective.
Outdoors, rain does the cleaning. What you can do is remove old leaves properly: cut the stalk close to the stem with pruners rather than pulling, since a torn leaf stalk leaves a ragged stub that dies back into the stem. Yellow leaves at the base of an otherwise healthy plant are normal ageing, not a warning sign.
Through the year, and what to write down
The rhythm is simple. Spring is when everything happens: mulch, feed if potted, cut back anything leggy, and start watching for scale as the sap rises. Summer is watering and shade management only, with no pruning and no feeding after midsummer. Autumn brings the flowers, and the plant is left alone. Winter is a matter of drainage and shelter, and of resisting the urge to water.
Keep two records and they will pay for themselves. First, the date each spring when new leaves start to unfurl; that single date tells you how the plant responded to the previous winter and whether a cold spell set it back. Second, the date you first find scale in the year, and where on the plant it was. Scale returns to the same generations of leaves and the same shaded inner stems, and knowing where to look in early spring means catching it while it is still a five-minute job.
Also note the position of any new basal shoot as it appears. Those shoots are the plant's own replacement growth, they are the easiest source of new plants by division, and they tell you the root system is healthy even when the top looks tired.
