The reason wild watercress is dangerous
Watercress grows abundantly in ditches, field drains and stream margins, and it looks like free food. The reason it is not is the sheep liver fluke, a parasite whose life cycle runs through livestock, a small water snail, and the wet vegetation at the edge of the water. Infected sheep and cattle pass fluke eggs in their dung, the larvae develop in the snails, and the final infective stage leaves the snail and encysts on plant surfaces just above and below the waterline. Eaten raw on a leaf, those cysts can infect a person.
That is why the rule is about the water upstream, not about how clean the plant looks. A stream that runs through or below a field where sheep or cattle graze is the exact situation the parasite needs, and there is nothing visible on the leaf to warn you. Watercress from such a place cannot be made safe by rinsing it, by soaking it in vinegar, or by washing it in salt water; the cysts stick fast. Only thorough cooking destroys them, which defeats the point of a salad crop.
This is not a theoretical risk dredged up for a disclaimer. Human liver fluke infection from wild watercress is documented in every country where sheep are grazed near watercourses. Grow it at home and the problem simply does not exist.
Why a tray of tap water removes the risk entirely
Every part of the fluke's route to your plate runs through open water shared with grazing animals. Break that and the parasite has no way in. A pot of compost standing in a tray you fill from the mains and empty regularly has no snails, no livestock upstream, and no contact with a watercourse, so home-grown watercress is safe to eat raw straight off the plant after an ordinary rinse.
This is also the practical argument against the tempting shortcuts. Do not fill the tray from a water butt, a pond or a stream to save mains water, and do not stand the pot in a garden pond because it looks natural. Those choices put your cress back into exactly the environment the safety rule is about. Commercial watercress is grown in spring-fed beds precisely because the grower can guarantee the water source; your tray is the domestic version of the same control.

Stale water is the commonest actual problem
Setting the parasite question aside, most watercress that fails at home fails because the tray was left. Water that has stood for four or five days in warm weather loses its oxygen, turns cloudy and develops a sour smell. The roots stop working, the lowest stems go brown and soft where they meet the water, and the whole clump yellows from the bottom up. It looks like a disease and it is not; it is drowning in its own stale water.
The fix is the same as the prevention. Tip the tray out completely, rinse the outside of the pot, cut away any stems that have gone brown and slimy at the base, and refill with fresh cold tap water. Then shorten the interval you were using. A clump caught within a few days of the first yellowing recovers fully in a fortnight.
- Smell the tray before you top it up Fresh water has no smell. Any sourness means it should have been changed already. Make this a habit and you will never lose a pot.
- Clear the green film A green algal film on the water and on the pot is harmless to the plant but a sign the water is standing too long and possibly overfed. Scrub the tray when you empty it and cut the feeding back.
- Do not let it dry out either The opposite mistake kills faster. A tray that runs dry on a hot day wilts watercress within hours and the leaves that collapse do not recover. Check the tray in the evening in summer as well as the morning.
Pests that actually turn up on a home pot
Watercress is not troubled by much, but a pot standing in water attracts a specific and short list. Aphids colonise the growing tips and are the main nuisance because you eat those tips; flea beetles pepper the leaves with small round holes in dry warm weather; slugs and snails come to the wet compost and the damp rim of the tray; and mosquito larvae will breed in tray water left standing for a week or more in summer.
Because this is a raw leaf crop that you cut every week, deal with all of them physically rather than by spraying. Aphids wash off under a firm jet of water, and a colony caught early on two or three shoots is easiest removed by cutting those shoots off and using them or binning them. Slugs are picked off the tray rim in the evening. Mosquito larvae vanish the moment you start changing the water on schedule, which is the answer to most of this list.

Always inspect a cut bunch in a bowl of water before eating it, home-grown or not. Aphids sheltering in the tight growing points do not come off in a quick rinse under the tap, and lifting the leaves out of a bowl leaves them behind.
Keep a note of what appeared and when
Pests on watercress arrive at much the same point every year, so a couple of dates makes next season easy. Write down the day you first see aphids on the tips and the day flea beetle holes first appear, because both are cues to put mesh over the pot a week earlier next time rather than reacting after the damage.
Also record any week where the plant yellowed and what the tray water was like when you noticed. Nearly every time, that note will read the same way, and after one season it stops being a mystery and becomes a calendar entry telling you to change the water daily from a particular point in the year.
