Overview
Costata Romanesco is the classic Italian cocozelle zucchini, open pollinated and offered by Johnny's Selected Seeds. The fruit is medium grey-green, boldly ribbed, and dusted with pale flecks along the ridges, so slices come out with a scalloped outline. Flavor is where it wins: firm, nutty, and far better eating than most hybrids, though the big-leafed bush plant gives you roughly half the harvest of a hybrid. Cut fruit at 4 to 8 inches for tender eating, or let a few run to 18 inches for stuffing and baking. The plant is also a generous source of male blossoms, which are excellent battered and fried. Sow after frost once soil has warmed, give plants plenty of room for airflow to limit powdery mildew, and keep picking to sustain production. Listed at 52 days.
