Overview
Patty Pan is the generic scallop squash: flat, roundish, greenish fruit with a fluted, scalloped rim that looks like a small flying saucer. Named strains come in white, yellow, green, and bicolors (Sunburst and Patio Star are two well-known ones), but the shape is the constant. Plants are compact bushes roughly half the size of trailing squash, so they fit smaller gardens. Pick at 2 to 3 inches across for the most tender flesh; bigger fruit turns tough and seedy. The hollow center invites stuffing: scoop it out, pack in cheese, herbs, or a seasoned meat mixture, and bake. Sow an inch deep into warm, fertile ground once frost is past, and in hot regions make a second sowing in late summer for a fall crop.
