Soil and moisture: steady, never soaked
This is a plant from damp coastal ground, and it behaves like one. It wants soil that stays evenly moist and drains freely at the same time, which in practice means plenty of organic matter. Dig in two to three inches (5 to 8 cm) of compost before planting and top up with an inch (2.5 cm) each spring. On thin sandy soil the plant survives but stays small and the leaves toughen; on heavy clay the crown rots in a wet winter.
Water so the top six inches (15 cm) never dry out completely. In a warm dry spell that means a deep soak of two gallons (8 liters) per mature plant every three or four days rather than a daily splash. Shallow watering keeps the roots near the surface and makes the plant far less resilient the moment you go away for a week.
The first sign of underwatering is the leaf edges going dull and slightly inrolled by mid-afternoon, and recovering by morning. That is a warning, not damage. If the leaves are still limp at dawn, the plant has been dry for days and some of the older leaves will yellow and be lost. Overwatering shows differently: lower leaves yellow evenly while the soil stays wet, and the base of the stems goes soft and brown.

Feeding a plant you keep cutting
Every stalk you take is nitrogen removed from the plant, so a harvested ashitaba needs feeding in a way an ornamental would not. A spring mulch of compost plus a balanced granular feed as growth starts covers the base load. Through the picking season, a liquid feed with a nitrogen bias every two to three weeks keeps new stalks coming at a usable size.
Stop the nitrogen about six weeks before your first expected hard frost. Soft late growth pushed by feeding is exactly what gets damaged, and the plant should be moving reserves into the root at that point rather than making leaf. Resume in spring when the new shoots break.
Watch the color of the newest fully expanded leaf, not the oldest. Pale new growth with green veins means the plant is short of feed or the soil is too alkaline for it to take up iron. Uniformly pale old leaves at the bottom of a plant in midsummer usually just means nitrogen has been drawn upward, which is normal on a plant you are harvesting.
Light, heat and where the plant actually wants to be
In cool summers with regular cloud, ashitaba takes full sun and produces its stockiest growth there. Where afternoons regularly exceed 85F (29C), the same exposure bleaches the leaves and the plant sulks. In those climates give it morning sun and afternoon shade, or dappled light under a high canopy, and it will hold its color through the season.
Wind is the other consideration. The leaf stalks are hollow and brittle, and a mature plant standing three to four feet (90 to 120 cm) tall in an exposed spot snaps stalks in a summer gale, each break a wound that bleeds sap and invites rot. A position with a hedge or wall to the windward side saves more leaf than any amount of staking.
In containers, use the deepest pot you can manage, at least twelve inches (30 cm) deep and the same across for one plant. Container plants dry out fast and heat up fast, so put the pot where it is shaded even if the leaves are in sun, and expect to water daily in summer. Repot or top-dress every second spring; the taproot resents disturbance so lift and divide as little as you can.

Winter and the years after
Ashitaba is hardy to roughly 15F (-9C) in the ground with a dry crown and reliable drainage, and considerably less hardy in a pot where the root ball freezes solid. In cold areas, mulch four inches (10 cm) deep around the crown after the top has died back, or move containers against a wall out of the wind and the worst of the winter rain.
Cold rarely kills it outright; wet does. A crown sitting in saturated soil at 35F (2C) all winter is in far more danger than one that freezes dry. If your ground stays sodden, plant on a low mound or in a raised bed and accept a little extra summer watering as the trade.
A well-treated plant is productive for four or more years, and the limit is usually flowering rather than age. Keep cutting flower stems and keep a younger plant coming along from seed each year, and you will always have one in its most productive phase. Note the planting year on a label at the crown, because a plant of unknown age is one you cannot plan around.
Keep a simple record of the crown position, the year each plant was planted, the date growth broke in spring and any date you cut a flower stem. That last one matters most: a plant that has tried to flower once will try again, and knowing which crown it was tells you which plant to replace first.
