Finishing the drying under cover
Whether you picked pods in batches or pulled whole plants, the crop finishes drying somewhere sheltered. This step exists for two reasons: ripe pods split, and you want them splitting indoors over a sheet rather than outdoors over soil; and rain on nearly dry pods is the one thing that ruins the crop at the last moment.
Spread picked pods in a single loose layer on trays, racks or an old sheet, or hang pulled plants upside down from a beam with a tarpaulin underneath to catch what falls. Either way, air has to move around everything. Warmth matters far less than airflow, and a stuffy hot shed is worse than a cool airy one. Turn trays of pods every couple of days so the layer underneath does not sit damp.
Allow one to three weeks. The crop is ready when the pods are papery and split at a light squeeze, the stems snap rather than bend, and a bean cannot be dented by a thumbnail. The thumbnail test is the one that decides it. A seed that still gives slightly under a nail is around 14 to 16 percent moisture, and sealed at that level it will mold in the jar within weeks. Properly dry adzuki is glassy hard and will not mark.
Do not put the crop in full sun on a hot day to speed things up. Fast surface drying cracks and splits the seed coats, and split beans store poorly and germinate badly if you were keeping them to sow.

Threshing and winnowing at garden scale
Threshing a home adzuki crop needs no equipment at all. Once dry, the pods are brittle and give up their seed to fairly light violence. The practical method is a clean pillowcase, a sturdy sack or a large lidded tub: load it half full, close it, and beat it against a step or a wall, or lay it flat and walk along it, for a few minutes.
Open it, lift out the bare stems and empty pod cases by hand, feel through for any pods still closed, and repeat if you find them. Intact pods after a proper beating almost always mean the crop was still slightly damp, so give the whole lot another few days rather than beating harder and cracking the seed. Ten minutes usually clears a short row completely.
What comes out is beans mixed with light chaff, and separating the two relies on the beans being much heavier. Pour the mixture slowly from one bucket into another in front of a fan on its lowest setting, or outdoors on a steadily breezy day. The chaff blows sideways and the beans fall straight down. Two or three passes leave the seed almost clean. Start low and pour from a low height until you can see how far the chaff carries, because a fan set too high blows the crop away with the rubbish.
Finish by hand. Tip the beans onto a tray and pick out grit, stem fragments, splits, shriveled beans and any that are discolored. Damaged seed is the part most likely to carry mold into storage and the part most likely to be hiding a weevil larva, so be fussy for ten minutes here.
- Confirm the crop is bone dry before threshing Thumbnail test several beans from different trays. If any dent, wait another few days. Threshing damp pods tears them rather than breaking them and leaves seed behind in the straw.
- Load a sack or lidded tub half full Do not overfill. The plants and pods need room to move, and movement is what breaks the pods open. Cut bundles free of their string over the tarpaulin.
- Beat or tread for a few minutes Swing the closed sack against a step or a wall, or lay it flat and walk along it. Keep going until the contents feel like loose chaff rather than whole plants.
- Lift out the straw and check for closed pods Open the sack over a tarpaulin, shake each stem lightly and set it aside. Feel through the straw before discarding it; intact pods mean the crop needs more drying time.
- Winnow with a fan on low Pour slowly from bucket to bucket in front of the fan, outdoors or over a sheet. Repeat two or three times until only clean beans are left in the receiving bucket.
- Hand sort on a tray Remove grit, splits, shriveled beans and any with a small round hole or a dark spot on the seed coat. Those holes are weevil exits and those beans are already lost.
Killing bean weevil before the beans go in the jar
This is the step that people skip and then lose the whole crop. Bruchid beetles, generally called bean weevils, lay their eggs on developing pods out in the garden. The eggs hatch and the larvae bore into individual beans, and at harvest the seed looks entirely normal because everything is happening inside it. Weeks or months later small neat round holes appear in your stored beans, adults emerge inside the jar, lay again on the beans around them, and the infestation multiplies until the jar is dust and shells.
You cannot see it coming and you cannot sort it out by eye at harvest. The only reliable answer is to treat every batch of clean, fully dry beans before it goes on the shelf, whether or not you have ever had a problem. Treat it as a routine part of the harvest, exactly like winnowing.
Freezing is the easier method and the safer one if you intend to sow any of the seed. Seal the clean dry beans in an airtight bag or jar, freeze at 0F (minus 18C) for a full week, then leave the container sealed until it has come back to room temperature before opening. Opening a cold jar in a warm kitchen condenses moisture on the beans. The full week matters: a couple of days kills adults but not all eggs.
Heating works too and suits people without freezer space, but it is only for beans you will eat. Spread the beans one layer deep on a tray and hold them at about 140F (60C) for two hours in an oven at its lowest setting with the door slightly ajar. That kills every stage. It also kills the embryo, so heated beans will never germinate; keep your sowing seed aside and freeze that instead. Do not go hotter to save time, because higher temperatures scorch the seed coats and spoil the beans.
The beans must be fully dry before either treatment. Freezing damp seed forms ice crystals that rupture the seed coat, and heating damp seed cooks it. Dry hard first, then treat, then store.
Storing the crop and keeping seed to sow
Clean, dry, treated beans go into airtight glass jars somewhere cool, dark and dry, where they hold their eating quality for several years. Label every jar with the year, because one jar of home-grown adzuki looks much like another after two seasons and you want to work through the oldest first.
Watch the jars for the first fortnight. Condensation on the inside of the glass means the beans were not dry enough. Tip them straight back onto a tray, dry them for another week, and re-jar them. Check again every couple of months for small round holes or fine dust at the bottom, which would mean the weevil treatment did not take and the batch needs freezing again.
Set aside seed for sowing before you start cooking from the jar. Take the largest, cleanest, most evenly colored beans from the healthiest plants in the bed, freeze that portion for its week, and store it separately in its own labeled jar in the coolest dark place you have. Adzuki is largely self-pollinating, so seed saved from a home patch comes true, and it germinates well for three or four years before dropping off.
Record the weight you jarred, the date you treated it and by which method, and the germination you get from your own seed the following spring. That last figure, tracked over a few years, tells you exactly when your saved line needs refreshing, and it is the sort of thing nobody remembers accurately without writing it down.
