One tree is not enough: male and female are separate plants
Chinese bayberry, also sold as yangmei or red bayberry, is dioecious. A given tree carries either male catkins or female flowers, never both. The fruit you want grows only on female trees, and a female flowers, drops its flowers and sets nothing at all unless pollen from a male reaches it. This is the single most common reason a healthy, well grown tree reaches its sixth or seventh year without ever producing a berry.
The pollen moves on wind, not insects, so the male does not need to be next to the female. A male within about a hundred feet (30 m) upwind of your females is comfortable, and pollen carries several times that distance in an open site. What matters is that a male exists somewhere in that radius and that it is old enough to flower. If a neighbor already grows one, you may need nothing. If yours is the only bayberry for a mile, plant a male yourself.
You cannot tell the sexes apart from foliage, bark or habit, and a seedling will not reveal itself until it first flowers, which can be six to eight years out. Buy grafted trees whose sex is stated, and label the male permanently in the ground, because once both are mature and leafed out you will not be able to tell which is which by looking. If space is tight, one common trick is to graft a male branch onto the top of a female tree so the pollen source rides on the same trunk.

Two females do not pollinate each other, and neither does any other fruit tree in the garden. Bayberry pollen comes from bayberry males only, so a plum or a citrus flowering nearby contributes nothing.
Drainage first, then acidity
In the wild this is a hillside tree. It grows on slopes with thin, acid, gritty soil where rain runs straight through, and it has almost no tolerance for roots sitting in water. Heavy clay that stays sodden for a day after rain will kill a young tree within two or three wet seasons, usually by root rot that shows first as sudden branch dieback in mid summer. Give it a slope, a bank, a raised mound, or a bed built up eighteen inches (45 cm) above the surrounding grade.
The soil should be acid, roughly pH 4.5 to 6.0. Neutral or limy ground turns the foliage pale yellow between green veins and stops growth. Do not add lime, wood ash or mushroom compost anywhere near the root zone. Coarse material is welcome: grit, decomposed granite, pine bark and leaf mold all suit it. Rich black vegetable-garden soil is the wrong thing, and the next section explains why.
Full sun gives the best crop and the deepest fruit color. Half a day of sun still produces, but the fruit ripens later, colors unevenly and tastes flatter. Shelter matters too, since ripe fruit is fragile and a windy site knocks it down before you can pick it.
Do not enrich the planting hole
Chinese bayberry fixes its own nitrogen. Its roots form nodules in partnership with a soil bacterium, and a settled tree makes the nitrogen it needs from the air rather than taking it from the soil. This is unusual for a fruit tree and it changes how you plant. Manure, rich compost and a handful of general fertilizer in the hole, the standard advice for almost every other fruit, actively harms this one.
Fed trees put on soft, sappy, over-long shoots, hold their vigor late into autumn, become brittle in cold and, most importantly, flower and fruit poorly. Growers describe overfed bayberry as running to wood. A tree that has been pushed with nitrogen can take two or three seasons of being left alone before it settles back into cropping.
So backfill with the soil that came out of the hole, opened up with grit or pine bark if it is heavy, and nothing else. Water it in, mulch the surface, and let the tree find its own nutrition.
- Dig wide, not deep Open a hole two to three times the width of the rootball but no deeper than the rootball itself. The roots run out sideways near the surface; digging deep only creates a soft pocket that the tree sinks into, which buries the graft union and invites collar rot.
- Set the tree slightly high Plant so the top of the rootball sits an inch or two (3 to 5 cm) proud of the surrounding soil, then taper soil up to it. On any ground you doubt, plant on a mound a foot (30 cm) high and let the roots grow down into the native soil at their own pace.
- Backfill with unimproved soil Return the excavated soil, firming lightly in layers so no large air pockets remain. Add no manure, no fertilizer and no lime. If the soil is heavy clay, mix in coarse grit or composted pine bark to open its structure, which is a physical change rather than a feed.
- Water once, thoroughly Give five to ten gallons (20 to 40 liters) slowly so the water reaches the full depth of the root zone and settles the soil around the roots. This single soaking matters more than frequent light watering over the following weeks.
- Mulch, keeping the trunk clear Spread three inches (8 cm) of pine bark, pine needles or shredded leaves over the root area, out to the drip line, pulled back a hand's width from the trunk. This holds moisture, keeps the surface roots cool and slowly acidifies the soil as it breaks down.
- Stake only if the site is windy A short, low stake tied loosely for the first year is enough on an exposed site. Trees allowed to flex build stronger trunks, so remove the stake after one growing season rather than leaving it to bite into the bark.
Spacing and what to write down
A mature tree makes a broad, dense, evergreen dome. Left alone it reaches twenty to thirty feet (6 to 9 m) across, though annual pruning holds a garden tree at ten to twelve feet (3 to 3.6 m). Plant at least fifteen feet (4.5 m) between trees and the same from a wall or fence. Crowded trees shade their own interiors, and shaded interior wood stops fruiting permanently.
Record the sex of every tree you plant and exactly where it stands, along with the planting date and the direction of your prevailing wind. In year six, when you are trying to work out why one female crops heavily and another does not, that sketch of who is upwind of whom answers the question in seconds. Note also the date of first flowering for each tree; it tells you when to expect the first real crop, which usually follows one or two years later.
