Overview
Hopi Blue is a flour corn the Hopi people of the Colorado Plateau have grown for centuries, and it remains central to their cooking, from piki bread to blue tortillas and atole. Deep blue-purple to near-black kernels sit on large 8 to 10 inch ears, and the soft starch grinds easily into fine blue cornmeal; lime processing deepens the color. Plants are tall, around 9 feet, and very drought tolerant thanks to a long taproot. It is open pollinated and late, listed at 100 days, harvested when husks are fully dry. Give it 300 feet of separation from other corn, or a two-week timing gap, so the blue color stays pure.
