Overview
Rosa Bianca is a midseason Italian heirloom, open-pollinated, with white fruit streaked in lavender and a shape that narrows at the top and widens into soft folds, like gathered fabric. The interior is creamy and almost pudding-like, with the mildest flavor of the classic eggplants and little bitterness, so it does not need salting. Sow indoors 6 to 8 weeks before the last frost and plant out in full sun in warm, fertile soil. Pick when the pastel blush is well developed and the fruit is still firm; a yellow cast means it has gone bitter. The spongy flesh soaks up olive oil in roasted and baked dishes such as caponata and parmigiana.
