Overview
Ghostbuster is a midseason hybrid with cylindrical to oval white fruit, 6 to 7 inches long and about 4 inches wide, under a green calyx. Plants grow broad and vigorous in a semi-spreading habit, thick with foliage, and the hybrid vigor gives it more reliability than older open-pollinated white eggplants. The flesh is creamy with fewer seeds than many heirloom whites. Start indoors 8 weeks before the last frost and transplant when soil is warm and nights hold above 55F. Pick while the skin is glossy and firm; white types take on a yellow tinge and a bitter note if left too long.
