Overview
Galine is an early French hybrid eggplant with a classic Italian bell shape, bearing firm, extremely glossy black fruit around six inches long and three inches across. Its main strength is early maturity and dependable fruit set even when summers run cool, making it a good fit for shorter-season gardens. Start seed indoors six to eight weeks ahead of the last frost and set out transplants once nights are reliably above 55F, in fertile, well-drained soil in full sun. The plants stay compact and easy to manage. Harvest when the fruit is about two-thirds of full size with taut, shiny skin for the mildest flavor; thin skin and a low seed count suit quick cooking such as grilling and stir-frying.
