Flat leaves, and what they tell you
Garlic chives carry flat, strap-shaped leaves about a quarter to half an inch (6 to 12 mm) wide, quite unlike the hollow round tubes of common chives. That flat blade is the quickest way to confirm what you are growing, and it also changes how you read the plant. A flat leaf that has gone limp and folded along its midrib is short of water. A flat leaf that stays upright but turns pale and narrow is short of feed.
Healthy leaves stand up on their own to a foot or more (30 cm plus) and hold a deep matt green. When a clump starts producing leaves noticeably narrower than the ones before, the plant is telling you something has run out, and it is nearly always nitrogen or root space.
Water hard after each cut, steadily the rest of the time
The roots are fibrous and sit mostly in the top six inches (15 cm) of soil, so garlic chives do not reach for deep moisture the way a carrot does. In normal weather a soaking once a week is enough in the ground. In a pot, expect to water every day or two through summer.
The moment that matters most is straight after cutting. A clump that has just lost all its leaves is regrowing entirely on stored reserves and root uptake, and dry soil at that point stalls the regrowth for two or three weeks. Water thoroughly within a few hours of cutting and keep the bed moist for the fortnight that follows.
Overwatering shows as yellowing at the base of the outer leaves and a soft, sour smell at the crown. Garlic chives will not tolerate standing water around the crown in winter. If your soil holds wet, plant on a low ridge or work in grit before planting rather than trying to manage it later.

Feed after every cut, not on a calendar
Cutting a clump to the base three or four times a season takes a great deal of nitrogen out of the soil. Feeding on a fixed monthly schedule misses the point, because the plant's demand spikes immediately after each harvest. Tie the feed to the cut instead: water the clump, then apply a balanced liquid feed or a light scatter of a nitrogen-rich fertilizer once the new shoots are an inch (2 to 3 cm) high.
Do not feed heavily going into winter. Late feeding pushes soft growth that gets cut down by the first hard frost and leaves the crown weaker than if you had done nothing. Stop feeding after the last cut of the season.
An annual mulch of compost, half an inch to an inch (1 to 2 cm) deep, spread around the crowns in early spring, covers most of what the plant needs and keeps the shallow roots cool through summer. Keep the mulch just clear of the crown itself.
- Cut, then water Cut the clump to the base, then soak it. Regrowth is driven by water reaching the crown, and a dry crown after cutting is the commonest cause of slow, thin recovery.
- Feed when the regrowth is an inch high Wait until you can see new green an inch (2 to 3 cm) above the soil, then apply a balanced liquid feed. Feeding a bare crown just leaches nutrient past the roots.
- Mulch in spring, not autumn Spread compost around the crowns as growth restarts. Autumn mulch piled over a dormant crown holds wet against it through winter and encourages rot.
Sun, soil and the things that actually limit the crop
Garlic chives want full sun, and they will accept half a day of it. In deeper shade the clump survives for years but the leaves come thin, floppy and short, and the plant flowers poorly. If a clump that used to crop well has gradually declined, check whether something nearby has grown up and shaded it, before you blame the soil.
The soil requirement is undemanding: any reasonably fertile ground that drains will do, at a pH between 6.0 and 7.0. What garlic chives will not take is a waterlogged crown. Everything else, including poor fertility, shows as reduced yield rather than as a dead plant.
They are hardy to around minus 20F (minus 29C) as a dormant crown, so in most temperate gardens winter care means nothing more than cutting the dead foliage away and letting the plant sleep.
Garlic chives are a poor companion for peas and beans, which resent alliums nearby. They sit well alongside carrots, tomatoes and roses, where their scent is often credited with confusing aphids.
When an established clump starts to fail
A clump that cropped well for years and has gone thin is almost never diseased. It is congested. Garlic chives multiply their own bulblets every season, and after three or four years the center of the clump is packed so tightly that the shoots have nowhere to expand into and no soil left to draw on. The symptom is unmistakable once you know it: a ring of decent growth around a dead or bare center.

What to record so next year is easier
Garlic chives run on a multi-year cycle, and almost nothing useful about them is visible within a single season. A few lines written down each year turn a vague sense that the bed is going downhill into a decision you can act on.
Note the date of each cut and roughly how much you took. Note the date the regrowth reached cutting height again, because that interval lengthening from three weeks to five is the earliest reliable sign that the clump needs dividing. Note the year each clump was planted or divided, marked against its position in the bed, so you know which ones are due. And note the date you first saw flower stems, because that date shifts very little from year to year and tells you when to start checking.
Record the position of each clump, not just the count. When you come to divide, knowing that the clump at the north end is five years old and the one beside it was split last spring is the difference between a planned job and guesswork.
