Vigor is the thing you are managing
Most citrus care advice is written for trees that need encouraging. Hassaku is not one of them. Given decent soil and water it produces long, thick shoots, a dense canopy and more flowers than it can possibly finish. Nearly every care problem you will meet on this tree is a consequence of that vigor rather than a shortage of anything.
The practical result is that your job is to keep growth steady rather than fast, to keep the canopy open enough for light to reach fruiting wood, and to reduce the crop to a number the tree can actually ripen. A hassaku that is fed hard and never thinned produces a huge crop of small, coarse fruit one year and almost nothing the next, and once that swing starts it takes two or three seasons to break.
There is also a size consequence. Fruit that develops in shade inside a crowded canopy stays small and its rind stays thin and blemished. On a fruit that is going to be peeled segment by segment, thin rind is not a bonus; it tears and makes the job miserable. Light on the fruiting wood is what gives you the big, clean-peeling fruit this variety is worth growing for.
Water: even beats generous
Citrus responds badly to swings between dry and soaked. On hassaku the two visible costs are split fruit in late summer and a sudden drop of half-grown fruitlets a few weeks after flowering. Both come from the same cause: the tree runs dry, then gets a heavy watering or a downpour, and the flesh expands faster than the rind can accommodate.
Water by soil condition, not by schedule. Push a finger, a screwdriver or a soil probe in at the edge of the canopy to a depth of 6 inches (15 cm). If it comes out dry at that depth, water; if it is still cool and damp, wait. A mature tree in open ground typically needs a deep soak every 7 to 12 days through the heat of summer, and much less as temperatures fall.
When you do water, water properly. Aim to wet the soil to 18 to 24 inches (45 to 60 cm), which for a mature canopy means running a soaker or drip line for a long, slow session rather than a quick pass with a hose. Wet the whole area under the canopy out to the drip line, because that is where the working roots are, not at the trunk.
Containers are a different problem entirely. A hassaku in a pot may need water daily in high summer and once a fortnight in winter, and it will not tell you it is thirsty until leaves curl. Check every pot individually, and never leave one standing in a saucer of water.

Feeding: moderate nitrogen, split across the season
A vigorous tree does not need a vigorous feeding program. Use a citrus fertilizer with a moderate nitrogen figure and the trace elements included, and split the year's allowance into three applications rather than one large one. The first goes on as growth starts in spring, the second after fruit set, the third in early summer.
Stop nitrogen after midsummer. Late nitrogen pushes a soft autumn flush that will not harden before cold weather, competes with fruit that is trying to finish, and gives you a canopy of tender shoots exactly when sap-feeding insects are looking for them. If the tree looks pale in autumn, note it and correct it the following spring rather than feeding then.
Spread fertilizer over the whole area under the canopy and slightly beyond the drip line, never in a heap at the trunk, and water it in. Feeding rings close to the trunk reach almost none of the working roots and can burn the bark.
Watch the leaves for the trace element shortages hassaku is prone to. Pale new leaves with a fine green vein network usually mean iron, most often caused by alkaline soil or waterlogging rather than absence of iron. Yellow blotches between the veins on older leaves point to magnesium, which a heavy crop will strip. Correct the underlying soil condition, then supply the element.
Thinning: the job that keeps the tree cropping every year
Hassaku sets far more fruit than it can ripen and is strongly inclined to alternate bearing. A tree that is allowed to carry everything it sets exhausts itself, produces a poor crop of small fruit, and then flowers weakly the following spring. Thinning is not optional maintenance on this tree; it is the main lever you have.
Thin once the natural drop has finished and the remaining fruitlets are around the size of a walnut. Doing it earlier wastes effort on fruit the tree was going to shed anyway; doing it much later means the tree has already spent the resources.
Aim for roughly one fruit for every 60 to 80 healthy leaves, which on a well-lit branch works out at one fruit per 8 to 12 inches (20 to 30 cm) of fruiting wood. Do not try to count leaves precisely; spread the crop evenly and remove clusters.
- Wait for the natural drop to end Several weeks after flowering the tree sheds fruitlets on its own. Let that finish before you start, or you will thin twice.
- Break up every cluster Where three or four fruitlets sit together, keep one and remove the rest. Clustered fruit stays small, rubs, and traps moisture and pests between the fruits.
- Take the shaded interior fruit first Fruit inside the canopy where little light reaches will never size up or color properly. Remove it before you touch anything on a well-lit outer branch.
- Remove anything already blemished Scarred, misshapen or insect-marked fruitlets do not improve. Take them out early and let the tree spend on the sound ones.
- Lighten the tips of long branches A big fruit hanging at the end of a slender shoot bends it to the ground and can tear it. Leave the fruit closer to the branch base and remove the outermost.
- Balance the whole tree, not each branch Step back regularly. A tree carrying its whole crop on one side will lean and will produce unevenly the next year.
If last season was a heavy crop, thin harder than feels right this spring. Two consecutive light-to-moderate crops will reset a tree that has slipped into alternate bearing far more reliably than trying to prop up the off year with extra fertilizer.
A short record that pays back within two seasons
Note the date the tree came into full flower, the date you finished thinning, and roughly how many fruit you left. When the crop turns out too small or the tree swings into an off year, that number is the only piece of evidence that tells you whether you thinned enough.
Also record each feed with its date and rough quantity, and any leaf discoloration with the date you first saw it and whether it was on new or old leaves. Iron and magnesium shortages look similar in memory but not in a written note, and the distinction decides what you do next spring.
