What the sparkle actually is, and what makes it
The glitter on the leaves is not frost, dew or a coating. Each shining bead is a bladder cell, a swollen single cell on the leaf surface that stores water and salt. They are how the plant survives bright, hot, dry, saline ground, and they are also why anyone buys it. They give the crunch, the faintly saline taste and the look that puts it on restaurant plates.
That matters because it inverts the usual advice. Most leafy crops want rich soil, steady moisture and a bit of shelter, and you give them that to make them tender. Do the same to ice plant and you get a big soft green sprawl with small dull bladders and a bland, watery taste. The bladder cells develop in response to stress: strong light, lean soil, restrained watering and salt in the root zone.
So the whole of caring for this plant is a deliberate refusal to pamper it. Full sun, gritty free-draining soil, no rich feeding, water only when the plant needs it, and a little salt. Every one of those is the opposite of what you would do for lettuce, and each one visibly increases the glitter within a week or two.

If your plant is green, lush and dull, it is not sick. It is too comfortable. Stop feeding, cut back on watering and move it into stronger light, and the new growth will come with far more sparkle.
Light, and why it comes first
Give this plant the sunniest place you have and it will use all of it. Full sun all day, against a hot wall, on gravel, in the spot that scorches other salads, is exactly where it belongs. Six hours of direct sun is the minimum for good bladder development, and eight or more is better.
In shade or under a light-diffusing cover the plant does not die. It stretches. The internodes lengthen, the stems go thin and pale, the leaves get bigger and flatter, and the surface goes dull because the plant is no longer under the light stress that drives the bladder cells. It is still edible and quite pleasant, but it is not what you grew it for.
Heat is not a problem in the way it is for other salads. This is a crop that keeps producing tender shoots through the weeks when lettuce and true spinach bolt or turn bitter, which is a good reason to give it the difficult hot corner rather than a prime bed. What it will not tolerate is cold and wet together, and it has no frost hardiness at all.
- Pick the hottest, brightest spot A south-facing wall in the northern hemisphere, or a north-facing one in the southern, with free-draining ground or gravel at the base. Reflected heat and light from the wall increases the glitter noticeably compared with an open bed.
- Do not shade it in a heatwave Where you would put shade cloth over lettuce, leave this uncovered. It handles heat that stops other salad crops, and shading it costs you the bladder cells you are growing it for.
- Move containers as the season turns Light angles change through the season and a pot that was in full sun in early summer can be in the shade of a hedge by late summer. Check where the shadows fall every few weeks and slide the pot into the sun.
Soil, salt and feeding
Lean, gritty and sharply drained is the target. In open ground, a sandy or stony bed suits it perfectly, and heavy soil should be opened up with coarse grit rather than improved with compost. Do not dig in manure or rich compost the way you would for a leaf crop. Fertility here works against you: nitrogen drives soft, fast, watery growth with poor bladder development, and it is also what makes a plant collapse in a wet spell.
Salt is the interesting part. This plant genuinely tolerates saline conditions that would kill almost anything else in the vegetable garden, and it takes salt up into the bladder cells, which is where the faintly briny taste comes from. A light watering with lightly salted water once every week or two, roughly a teaspoon of salt in a gallon (5 ml in 4 L), increases the flavor and the sparkle noticeably.
Do this with care and only in containers or a dedicated bed. Salt does not break down and it does not leave the soil unless it is washed out by rain or irrigation, so it accumulates. It will damage neighboring plants, harm soil structure over years and is not something to apply casually across a vegetable bed. In a pot you can simply replace the mix at the end of the season.

Never apply salt to dry soil or to a wilting plant. Water normally first, then apply the salted water to already damp soil, so the salt is diluted through the root zone rather than concentrated at the surface.
Watering, pinching and holding the shape
Water this plant like a succulent, because that is what it is. Soak it thoroughly, then let the top inch and a half (4 cm) of soil dry out before soaking it again. In hot weather in open ground that might be once every four or five days; in a pot on a sunny patio it can still be every day or two, because the volume is small. What you never want is permanently damp soil, which rots the sprawling stems where they touch the ground.
It tells you clearly when it is thirsty. The leaves lose their plumpness and go slightly soft and the whole plant flattens a little, and a good soak brings it back within a couple of hours. That mild wilting is a useful signal rather than a crisis, and letting the plant reach it occasionally is part of what keeps the leaves crisp and saline rather than watery.
Pinch the growing tips out from early on. The plant naturally sprawls into a low mound, and pinching makes it branch into many more shoot tips, which is exactly what you harvest. Every time you pick a tip you are also pruning, so a plant picked over weekly stays compact and productive, and one left alone runs out into long bare stems and starts flowering sooner.
- Soak, then let it dry down Water thoroughly until it runs out of the base or wets the soil six inches (15 cm) down, then leave it until the top inch and a half (4 cm) is dry. Little and often keeps the surface wet and the roots shallow, which is the worst of both.
- Water the soil, not the leaves Overhead watering knocks bladder cells off the leaves and leaves the crowded center of the plant wet overnight, which is where rot starts. Direct the water at the base and keep the foliage dry.
- Pinch the tips at six inches When shoots reach about six inches (15 cm), pinch out the top two inches (5 cm). Two or three side shoots break below within a fortnight, and the plant becomes a mound of pickable tips rather than a few long runners.
- Keep the stems off wet ground Spread a layer of gravel or coarse grit under the sprawling stems rather than organic mulch. It keeps them dry underneath, reflects light up into the plant, and stops soil splashing onto leaves you want clean.
- Note the week the glitter improved or faded Write down when you changed something, watering, salt, position, and what the leaves looked like a fortnight later. This is a crop where the effect of each change is visible, and one season of notes is worth more than any general rule.
