Only from your own planting
The single rule that governs harvesting this crop is that you cut only from the plant you bought and put in yourself, in the container or bed you prepared. Its wild relatives, hemlock water dropwort among them, grow in the same wet places, look similar enough at a glance to fool experienced people, and are lethally poisonous rather than merely unpleasant. There is no bruise test, no smell test, and no photograph comparison that makes wild gathering acceptable.
This has a practical consequence at cutting time. Keep the crop physically distinct, so nothing self-sown can arrive in the same patch unnoticed, and pull out anything you did not plant that comes up inside it. If a stolon has escaped and rooted outside the bed, either bring it back inside the boundary or dig it out, but do not start harvesting from a spreading fringe you can no longer account for.
If you are ever less than certain about the origin of a clump, do not eat it. The whole point of growing this crop yourself is that the question never has to be asked.
When it is ready and how often it comes back
A new planting needs six to eight weeks before the first cut, longer in cool weather. Wait until stolons are running and the block has closed up; cutting a thin new planting sets it back for the rest of the season. After that, the plant is ready whenever the leafy shoots are 6 to 10 inches (15 to 25 cm) tall, which in warm weather is every three weeks or so and in cool weather every five or six.
Cut on the young side. The quality difference between a shoot cut at 8 inches and one cut at 15 inches is large: the young one is tender all the way down the stalk, the older one has a hollow fibrous stem you end up discarding and a much stronger flavor. Waiting for a bigger crop costs you the part you actually wanted to eat.

How to make the cut
Shear a whole block rather than picking individual leaves. Picking leaves off leaves the old stems standing, and the clump keeps ageing regardless of how much you take. A level cut across the block resets every stem at once, and the regrowth arrives evenly instead of in a scatter of odd shoots.
Cut to about 2 inches (5 cm) above the crown. That leaves enough stem base for the plant to push new shoots immediately; cutting flush to the mud slows recovery by a week or more. Use scissors or a sharp knife rather than tearing, since torn stems sitting in standing water rot back further than clean cuts do. Then clear away every scrap of loose leaf from the water surface, because floating debris is what turns a tray or a wet bed sour.
- Shear the block level at 2 inches (5 cm) Gather the shoots in one hand and cut across in one pass. Do not cut below the crown or flush with the soil surface.
- Rake the debris off the water Loose cut leaf floating on standing water rots within days and sours it. Take it out the same day and compost it away from wet ground.
- Feed at half strength after cutting A weak nitrogen-rich liquid feed straight after each hard cut gets the regrowth away quickly. Skip it once growth slows for the cold season.
- Work a rota of two or three blocks Cut one block, then the next a fortnight later. A single block cut all at once means a glut followed by three empty weeks.
Washing, and eating it raw
This crop grows in standing water, which means anything that lands on the surface ends up on the leaves. Wash it properly: fill a bowl with cold water, swish the cut shoots hard, lift them out rather than tipping the bowl, and repeat until no grit settles at the bottom. Grit hides at the base of the leaf stalks, so wash after cutting rather than before, when the shoots are already separated.
There is one more reason for care. Leafy plants grown in water that livestock have access to, or that receives runoff from grazed land, can carry liver fluke and other waterborne parasites on the leaf surface. Home containers filled from a tap or a clean water butt are not a realistic risk, but if your bed is fed by a ditch or a stream that runs through pasture, cook the crop rather than eating it raw. Cooking is brief in any case: this plant wilts in under a minute and turns to mush if you leave it in the pan.

Keeping it, and keeping the numbers
Cut shoots keep four or five days in the fridge if you treat them like a cut flower rather than like a salad bag. Stand the stems in an inch of water in a jar, put a loose bag over the top, and keep them cool. Sealed in a tight bag with no air they go slimy in two days. They do not dry well and they turn watery if frozen raw, so blanching for thirty seconds and squeezing dry is the only freezing worth doing.
Keep a short record of the cutting rota, because it is the thing that pays back fastest. Note the date of each cut, the block you cut, and how many days regrowth actually took to reach cutting size. Within one season those figures tell you exactly how many blocks you need for a continuous supply and when in the year the intervals stretch out, which is far more useful than a general rule about three to four weeks.
