The honest summary: not much attacks it
Jerusalem artichokes are among the least troubled crops in a home garden. The foliage is rough and unappetising, the plants outgrow early damage easily, and nothing routinely defoliates them. If you are used to fighting for brassicas or potatoes, the low level of intervention here is genuine rather than a gap in the advice.
That means the problems worth knowing about are a short list, and most of them are about water, soil and the plant's own vigor rather than about insects.

Sclerotinia is the one to take seriously
Sclerotinia rot, sometimes called white mold, is the only disease likely to kill plants outright. A healthy stem wilts from the top down over a few days, and at the base you find a soft, bleached lesion with white cottony growth and, inside, hard black bodies the size of a peppercorn. Those black bodies are the survival structures, and they stay viable in the soil for years.
Act as soon as you see it. Pull the whole plant with as much of the root and surrounding soil as you can, bag it, and put it out with rubbish rather than on the compost pile, which will not get hot enough to kill the sclerotia. Do not leave the stem lying in the row while you finish other jobs.
The conditions that bring it on are dense wet growth with no air movement at the base: heavily fed plants, close spacing, a row that has blown over, or a wet autumn. Wider spacing, staking, and not feeding are the whole prevention strategy. Sunchokes share this disease with beans, lettuce, carrots and many others, so do not follow an infected sunchoke bed with those.
Slugs, and the cost of storing in the ground
Leaving the crop in the soil over winter is the right call in most gardens, but on heavy, wet ground it hands slugs several months of undisturbed access to a thin-skinned tuber. The damage is not usually total, but by late winter a proportion of the crop is grazed and holed, and the wounds let in rot.
Judge it by your own soil. If the row drains and the tubers you lift in early winter are clean, keep digging as you go. If the first fork-load in early winter is already pitted, lift the whole bed at once, trim the damage, and accept the shorter storage life. Clearing the dead tops and any mulch away from the row before winter removes the cover slugs shelter in and makes a visible difference.
The plant itself is the main hazard
More gardens are damaged by sunchokes spreading than by anything that eats them. A single missed tuber becomes a plant that produces dozens more, and within three or four years a row has become a thicket that shades a quarter of the plot and cannot be dug out in one go. People give up whole beds to it.
Containment is a habit, not an event. Sift the soil in every hole you dig, pull stray shoots at ankle height before they build tubers, and keep a hard edge to the bed by cutting a spade's depth around it each spring so runners hit disturbed ground. If a colony has already got away from you, the reliable method is to dig the whole area, remove everything you find, and then cut down every shoot that appears through one full growing season without letting any of them reach knee height. One season of that exhausts most stands; a half-hearted year does nothing.
Do not attempt to kill a stand by covering it with sheeting for a few months. The tubers hold enough reserve to push shoots sideways and come up outside the sheet, and you end up with a wider colony than you started with.
Keep a simple log: the date you first see stray shoots each spring, and how far out from the marked row they appear. That distance, tracked over two or three years, is the only honest measure of whether your containment is working.
