Four things that decide the year
Most of what a peach needs is unremarkable, and a tree will survive years of benign neglect. But four jobs, each of which has a narrow window, account for nearly all the difference between a tree that produces good fruit and one that does not. Everything else on the calendar is support.
The first is the rain cover, which goes up in early winter, before any spores can be splashed onto the buds, and comes off in late spring. The second is pruning, which happens in the growing season and never in winter, because winter cuts let in silver leaf and canker. The third is thinning, which happens after the tree has finished dropping its own fruit and takes the crop down to one fruit every 6 inches (15 cm). The fourth is picking, which means going over the tree every second day for about a fortnight.
If you are short of time, do those four and let the rest slide. If you skip any one of them, no amount of feeding or watering makes up for it.
The year, season by season
The table below is written in seasons rather than months so that it reads the same in either hemisphere. Anchor it to your own tree by the buds: the moment the buds visibly swell and start to show pink is the start of the working year, and everything before that is winter preparation.

Water and feed: the parts that are easy to get wrong
A peach in the ground rarely needs watering except in its first two summers and in a drought, but the exception matters. From fruit set until picking, the tree needs an even supply. Swings from dry soil to a heavy soak while the stone is hardening cause split stones and cracked fruit, and a dry spell three weeks before picking costs you fruit size that cannot be recovered.
Water deeply and infrequently: a long slow soak that wets the soil to 12 inches (30 cm) once a week in dry weather beats a daily sprinkle every time, because shallow watering keeps the roots at the surface. Water at the base and not over the leaves and fruit, especially as the crop colors, because wet fruit skins are how brown rot starts.
On feeding, the mistake is nitrogen late in the season. Nitrogen in spring is right and drives the leaf area you need to ripen fruit. Nitrogen after midsummer pushes soft growth that will not harden before the cold, and soft unripened wood is what canker and winter damage take. From late summer onwards, switch to potash if you feed at all.
A tree in a large pot is a different case entirely. Its compost dries out in a day of heat and it needs checking daily through summer, along with a liquid feed every fortnight from bud break to harvest, because there is no soil reserve to draw on.
Frost at flowering: the one thing you cannot plan around
Peaches flower early, often before the last frosts, and open flowers are killed at around 28F (minus 2C). A tree that flowers well and sets nothing almost always met a cold night at the wrong moment. Nothing on the calendar can prevent that; you can only react.
Watch the forecast through the whole flowering period and be ready. Two layers of row cover thrown over a small tree or over the front of a fan holds enough warmth to make the difference on a marginal night. Put it on in the late afternoon and take it off in the morning so pollinators can reach the flowers.
Wet soil holds and releases more heat overnight than dry soil, so if a frost is forecast and the ground is dry, water the root area in the afternoon. It is a small effect but it is free, and marginal nights are exactly where a small effect changes the outcome.
The four dates worth writing down every year
Keep a short record and the calendar stops being generic advice and becomes your tree's actual timetable. Four dates carry nearly all the value: the date the buds first showed pink, the date the natural fruit drop finished, the date you picked the first ripe fruit, and the date you first saw leaf curl or any other disease.
Bud break tells you whether the season is early or late and shifts everything else with it. The end of the natural drop is your signal to start thinning. First pick, over two or three years, tells you when to begin checking the fruit rather than being caught out. And the first sign of disease, counted backwards, tells you how early the rain cover really has to go up in your garden.
Add the position of each tree and a line on how the crop turned out, and after three seasons you can tell whether a poor year was frost, thinning or water. Without those notes, every bad year looks the same and gets blamed on the weather.
