What actually sets the heat in a pod
Capsaicin is made in the pale placental tissue that the seeds attach to, not in the seeds and not in the flesh. Anything that makes the plant work a little harder during the weeks the pod is filling pushes that tissue to make more, and anything that makes life comfortable pushes it the other way. The type you are growing sets the ceiling; how you grow it decides where in that range you land, and the swing between a coddled plant and a stressed one is easily two- or three-fold.
The window that matters runs from the day a pod sets to the day it starts changing color. Stress before flowering just gives you a small plant with few pods. Stress after coloring has begun damages the fruit you already have. Aim your effort at the middle stretch.

Heat also varies pod to pod on the same plant. The late pods made in high summer on a lean plant are routinely far hotter than the first ones. Taste one before you use a handful of them the way you used last month's.
Watering: lean, but never truly dry
The controlled dryness that raises heat is a narrow band. You want the plant to reach the point where the newest leaves lose their gloss in the late afternoon and recover overnight, then water it thoroughly. That cycle, repeated through pod fill, is the single most reliable way to make a hot type hotter.
Go past it into real wilting and you pay for it: flowers drop, pods stop sizing, and sunken pale patches appear on the shoulders of any fruit exposed to the sun. Those pods rot before they color. Watering is also the wrong tool for the last three weeks before harvest, when a heavy soak after a dry spell splits the skins of ripening pods along their length.
Judge a container plant by weight, not by the look of the surface. Lift the pot each morning for a week after a full soak and you will learn the weight at which it needs water, which is far more accurate than poking a finger in.
Feeding: build the frame first, then starve it slightly
These plants carry a heavy crop of small pods for months, so they do need feeding, but the timing is the whole thing. Nitrogen early builds the frame that carries the crop. Nitrogen late gives you a dark green bush covered in leaves and almost nothing else, and it also dilutes the heat of what does set.

Curled, very dark leaves with flower buds dropping unopened is a nitrogen excess, not a disease. Stop all feed for three weeks and water plainly; the plant sets within a fortnight of correcting it.
Heat, cold and the weeks when nothing sets
Flowers abort when the day runs above 90F (32C) or the night stays above 75F (24C), and equally when nights drop under 55F (13C). A hot spell will therefore give you two or three weeks with flowers falling unopened, and it resumes without any help once the weather turns. Do not respond by feeding or watering harder, which only makes leaf.
Because the very hot types need such a long run to ripen, protecting the tail of the season is worth more than protecting the start. A sheet of row cover over the plants on the first few cold nights of autumn can buy the fortnight that turns a plant full of green pods into a plant full of red ones.
Handle these plants as if they were already hot
Capsaicin is on the outside of the plant as well as inside the pods. Brushing past a heavily cropping plant leaves enough on your hands to hurt badly if you then rub an eye, and it does not wash off with cold water and a quick rinse. Get into the habit now, while you are only pruning and tying, rather than learning it during harvest.
Nitrile gloves are the answer for any job that involves touching pods: picking, deseeding, trimming out damaged fruit. Fabric gardening gloves absorb the oil and become a hazard you put back on tomorrow, so keep a box of disposables with the tools instead.
- Glove before you touch a pod Nitrile, not fabric, and a fresh pair for each session. Take them off by peeling from the wrist so the outside never touches your skin.
- Wash with oil first, then soap Capsaicin does not dissolve in water. Rub cooking oil over dry hands, wipe it off with paper, and only then wash with hot soapy water. Water alone spreads it around.
- Keep the tools separate The snips you use on chillies pick up the oil. Wipe them with oil and then wash them, and do not use the same board for salad the same afternoon.
- Cover your face when working the hottest kinds Cutting a large quantity of very hot pods releases enough into the air to set off coughing in a closed room. Work outside or by an open window, and wear eye protection if you are deseeding a bowlful.
If it does get on skin, dairy helps more than water: full fat milk or yoghurt on a cloth held against the spot. For eyes, flush with plenty of cool water and expect it to last twenty minutes, and see a doctor if the pain has not eased after that.
