Overview

Marina di Chioggia comes from the Chioggia lagoon near Venice and is as ornamental as it is edible: round, deeply ridged fruit of roughly 4 to 15 pounds covered in a blistered, warty slate blue-green rind. The orange flesh is dense, sweet, nutty and nearly stringless, placing it among the finer eating squashes. Start seed indoors three to four weeks before transplanting or sow directly after frost, in hills 5 to 6 feet apart thinned to the strongest plant. The big vines can be trellised or left to sprawl. Cure two weeks in a warm dry spot after harvest and the fruit stores four to six months into winter. Traditional in Italian gnocchi, risotto and ravioli fillings.
