Plant it knowing the fruit is for cooking
Say this before anything else, because it decides whether the tree is worth its space to you: quince fruit is hard, gritty and mouth-drying raw, and it is grown to be cooked. Even a fully ripe fruit off your own tree will make you spit if you bite it. Cooked slowly with sugar it turns from pale cream to amber or deep rose and tastes of nothing else in the garden, and that transformation is the entire point of the tree.
So plant it where the crop will actually be used. One mature tree throws twenty to forty pounds (9-18 kg) of fruit in a good year, all ripening within about three weeks, all of it needing a pan and an afternoon. If nobody in the house cooks, the fruit will lie under the tree and rot, and you will have given a sunny corner to a crop you resent.
The compensation is that quince is a genuinely ornamental tree on its own terms. It is naturally small and crooked, the leaves are gray-felted underneath, and the flowers are large, single, pale pink and open after the frosts have generally finished, later than apple or pear blossom. Many people keep one for the flowers and the autumn scent and treat the preserves as a bonus.
Pick the site for moisture and shelter
Quince roots run shallow, mostly in the top eighteen inches (45 cm) of soil, and the tree shows drought stress faster than an apple standing next to it. It is the one fruit tree that tolerates a heavy, moisture-retentive soil and even ground that sits damp in winter, provided the water moves eventually. What it will not take is a site that bakes dry in midsummer.
Give it full sun, six to eight hours, because the fruit needs a long warm autumn to finish. In a cool climate the wall of a house, facing the afternoon sun, adds enough stored heat to carry the fruit from green to gold before the weather turns. Shelter matters as much as heat: the fruit is heavy, sits on short stalks and bruises on contact, so a tree in a wind funnel drops and marks its crop before you can pick it.
Aim for a soil pH between 6.0 and 7.0. Chlorosis, meaning yellow leaves with green veins, is common on thin chalky ground and is the main soil-related failure you will see. If your soil is alkaline and shallow, plan on an annual mulch of composted bark or leaf mold from the day the tree goes in rather than trying to correct it later.

Spacing, and how big it will actually get
Left as a free-standing bush, a garden quince settles at twelve to fifteen feet (3.6-4.5 m) high and roughly as wide, and takes fifteen years to get there. It is naturally multi-stemmed and leans, so give it more room sideways than you think a small tree needs. Fifteen feet (4.5 m) from a wall, a fence or the next tree is a working minimum; twelve feet (3.6 m) is the closest you should go and means annual thinning to keep light in the middle.
Trees grown against a wall as a fan take about eight feet (2.4 m) of height and twelve feet (3.6 m) of wall each, on permanent horizontal wires set a foot (30 cm) apart. This is worth doing in a cool climate purely for ripening. It is not a low-maintenance option: quince fruits on the tips of last year's shoots, so a wall-trained tree needs a patient hand every summer rather than a hard shear.
Suckers come up freely from the base, especially on a tree grafted onto its own species. Pull them off while they are green and soft rather than cutting them, because a cut stub branches into three. Keeping the base clear for the first five years is most of the establishment work.
Getting the tree in the ground
Bare-root trees go in during dormancy, any day between leaf fall and bud movement when the ground is neither frozen nor sodden. Container-grown trees can go in whenever the soil is workable, but they still root out fastest planted dormant. Get bare roots into the ground the day they arrive; if you cannot, heel them into damp soil rather than leaving them in a bag.
- Dig wide, not deep Make the hole two to three times the width of the roots and no deeper than the roots are long. Break up the sides with a fork so the roots push out into the surrounding ground instead of circling in a smooth pit.
- Backfill with the soil you took out Do not fill the hole with compost. A rich pocket in ordinary ground keeps the roots inside it and gives you a tree that never anchors. Spread the compost on the surface as a mulch and let the worms take it down.
- Keep the graft union above soil level Find the swollen kink low on the trunk and set the tree so it stands four to six inches (10-15 cm) clear of the finished soil surface. Buried, the top variety roots over the rootstock and you lose whatever size control you paid for.
- Stake for the first three years Drive the stake before the tree goes in, never after, or you will spear the roots. A shallow-rooted tree carrying heavy fruit rocks in wind and tears its own root hairs. Tie loosely and check twice a year that the tie is not cutting in.
- Water in heavily and mulch Give four to five gallons (15-20 L) slowly, even if the ground is already wet, to settle soil into the root spaces. Then mulch two to three inches (5-8 cm) deep over the whole root zone, leaving a clear collar four inches (10 cm) wide around the trunk.
The first two summers
Water is the whole job. A newly planted quince needs four to five gallons (15-20 L) a week through the first two dry summers, delivered in one slow soak rather than daily sprinkles, which only wet the mulch. Keep a three-foot (1 m) circle around the trunk free of grass, because turf up to the stem will halve the growth of a young tree.
Take off any fruit that sets in the first two years while it is still the size of a marble. A young tree that ripens fruit stops extending, and extension growth is what you need: quince crops on the tips of the previous season's shoots, so the wood you build now is the crop you pick in four years.
Write down the planting date, the exact position of the tree and what it was standing on when it went in, and note the date the last leaf fell. These sound trivial and become the only reference you have when a tree behaves oddly in year six. Add the date the first flower opened each spring from the start; over five years that single line tells you more about your own site than any general guide can.
A quince that stalls in year three, holding small pale leaves and making shoots under six inches (15 cm), is nearly always dry at the root or has grass growing to the trunk. Deal with both before reaching for fertilizer.
