Overview

Long Black Spanish is an old European winter radish, the elongated counterpart of Round Black Spanish and also sold under the French name Noir Gros Long d'Hiver. Its cylindrical roots reach about 9 inches, wrapped in a nearly jet-black skin that hides crisp white flesh. The flavor is far more pungent than a spring radish, with a horseradish-like bite that softens if you grate the flesh, salt it and let it rest. Sow in late summer or early fall for a cold-weather harvest; spring sowings bolt quickly as temperatures climb. The roots hold in the ground for weeks and keep for months in damp sand in a cool spot, which is what made this variety a winter staple in Polish, German and Ashkenazi kitchens. Peel before eating, since the dark skin is tough.
