Sprouting seed only, never garden seed
Radish seed sold for the vegetable bed and radish seed sold for sprouting are not the same product. Garden seed is frequently treated with a fungicide or an insecticide before it is packed, because it is expected to sit in cold wet soil for a week. Those coatings are sometimes tinted pink, blue or green, but a good number of them are colorless and leave no clue at all. Seed sold for sprouting or for food use is packed for a crop that is eaten raw, whole, within days of wetting it, and that is the only kind that belongs in a jar or tray on your counter.
Buy it in quantities you will finish inside a season. Radish seed keeps its vigor well when dry and cool, but an open packet in a warm kitchen picks up moisture, and damp seed germinates unevenly. A screw-top jar in a cupboard, or the door of the refrigerator, is enough. Before every batch, tip the dry seed onto a pale plate and look at it: sound radish seed is a small round or slightly angular bead, tan to reddish brown, hard under a fingernail. Discard anything split, shriveled, chalky or pale, because broken seed will not sprout and will instead sit in the water and rot.
If a packet says it is dressed, treated, or intended for sowing outdoors, it is not food. There is no rinse or soak that removes a seed treatment. Keep the two packets in different places so a tired hand never grabs the wrong one.
The soak is short: four to six hours, not overnight
This is the single detail that separates radish from the larger beans and grains. Radish seed is mucilaginous. Within minutes of wetting, the seed coat swells into a clear jelly that clings to the seed and to its neighbors. That gel is entirely normal and is a survival feature of the plant, but it holds water against the seed, and water held against a seed for twelve hours in a warm room is how a batch turns slimy and sour before it has even started.
So the soak is deliberately brief. Four hours is plenty in a warm kitchen, six is the outside limit in a cool one, and there is nothing to gain by going longer. What you are aiming for is a seed that has taken up enough water to break dormancy, not one that is sitting in a puddle. After the soak, drain hard and rinse twice with cool running water while stirring the seed with your fingers, which knocks most of the loose gel away. From that moment on the seed should be damp to the touch but never standing in liquid.
The gel will come back, and that is fine. Every rinse over the next two days will produce a little of it. What you are preventing is not the gel itself but a reservoir of trapped water underneath the seed bed.

Two ways to sow: jar or tray
A jar suits a mixed handful of sprouts eaten young and tangled. A shallow tray suits the taller, straighter, stemmy crop most people picture when they think of radish sprouts, because the seedlings can stand up and lean into the light together. Both work; they simply give you different food. The rule that governs both is the same: a single layer of seed, no piles, and complete drainage after every rinse.
- Measure the seed by the surface, not by the handful For a quart jar, two level tablespoons of dry seed is right. For a tray, aim for seed that sits shoulder to shoulder in one layer with the base still faintly visible between the seeds, which works out at roughly one and a half tablespoons per square foot (about 15 ml per 900 sq cm). Radish swells four to five times its dry volume, so what looks sparse now will look crowded on day three.
- Wash everything first Hot soapy water for the jar, the mesh lid, the tray and the draining rack, then a rinse and an air dry. Wash your hands before you touch wetted seed and again before every rinse for the rest of the batch. This is a crop eaten raw with no cooking step behind it, so cleanliness at the start does more than anything you can do later.
- Soak, drain, and set it at an angle Four to six hours in cool water, then drain completely. Rest the jar mouth down at about forty-five degrees in a bowl or rack so the last of the water keeps running out. A tray goes on a slight tilt over a drip pan. Water that cannot leave is the beginning of every bad batch.
- Keep it dark for the first two days A cupboard, or a clean towel thrown over the jar. Darkness at this stage gives you longer, straighter stems and gets the seed coats to loosen. Rinse and drain morning and evening throughout, without exception, even on day one when nothing appears to be happening.
What to write down from the first sowing
Sprouting rewards a written record faster than any other crop, because the whole cycle finishes inside a week and you can act on what you learned almost immediately. Note the weight or volume of dry seed, the length of the soak, the room temperature, and the clock time of the first and last rinse each day. Then note the day you saw the root tips break, and how the finished sprouts tasted.
After three or four batches a pattern shows up that no general guide can give you: your kitchen has a particular temperature, your seed has a particular vigor, and the two together set your timings. Most people find their own soak length drifts down towards four hours in summer and up towards six in winter, and that their seed density was too high on the first attempt. Write down the batch you disliked as carefully as the one you liked, because the failures are what tell you which variable to change.
