Watering: steady damp, never waterlogged
Sarcandra has a narrower moisture range than most evergreen shrubs. It has no drought strategy at all, because nothing on a moist forest floor ever needs one, and its fine surface roots die back quickly once the top few inches of soil dry out. Equally it will not stand in water; the roots rot in airless soil, and a plant that is drowning and a plant that is parched both go limp and yellow, which is why the two are so often confused.
The working test is a finger pushed 2 inches (5 cm) into the soil under the mulch. Damp means wait. Just barely moist means water now. Dry at that depth means you have already lost some fine roots and should soak the whole root area thoroughly, then correct whatever let it get there, usually thin mulch or too much root competition.
In practice an established plant in improved, mulched ground needs a thorough soak every 5 to 7 days through warm dry weather and nothing at all in cool wet spells. Water at the base rather than over the top; wetting the foliage repeatedly in still shaded air invites leaf spotting, and it does nothing for the roots.
A container plant runs on a much shorter cycle and needs checking daily in summer, when a 10 inch (25 cm) pot in warm weather can go from damp to dry in two days. Water until it runs freely from the base and empty any saucer. From late autumn until growth restarts in spring, cut the frequency by at least half; a cold pot kept wet through winter is the single most common way a container sarcandra is killed.

Feeding: mulch first, fertilizer second
The correct feed for this plant is an annual mulch. Spread 2 inches (5 cm) of leaf mold or well-rotted garden compost over the root area each spring, keeping it an inch (2.5 cm) clear of the canes. It releases nutrients slowly, holds moisture through the summer and keeps the surface roots cool, which between them cover almost the whole of the plant's requirement.
If growth is genuinely weak after a mulched season, add a single application of a balanced slow-release granular feed as new growth begins in spring. That is the whole feeding program for a plant in the ground. Container plants need it every spring without question, because every watering flushes nutrients out through the drainage holes.
Stop all feeding by midsummer. Late nitrogen pushes soft green canes that have not firmed up before cold weather, and those are the ones that blacken first in a freeze. In a marginal climate this timing matters more than the quantity.
Resist the temptation to feed a plant that is standing still in deep shade. Slow growth in low light is the plant working normally, and nitrogen applied to it produces long weak canes with widely spaced leaves that flop open and spoil the dense shape.
Wind, dry air and keeping the leaves unmarked
The glossy toothed foliage is half the reason to grow this plant, and each leaf is held for two or three years. Anything that marks a leaf therefore stays on display for a long time, and there is no treatment that repairs one. Foliage care is entirely prevention plus removal of what is past saving.
Dry wind is the main enemy and it works faster than sun. Cold winter wind on an evergreen draws moisture out of the leaves while frozen soil stops the roots replacing it, and the result is browned margins that appear all at once, usually on one side of the plant. A mesh screen on the prevailing side through winter, or a position in a corner rather than in a gap, prevents nearly all of it.
Take off badly browned leaves by cutting the stalk close to the cane with pruners rather than pulling them off, which tears the green bark and leaves a stub that dies back. Do this in spring when the whole winter's damage is visible at once, so you can judge how much to remove in a single pass.
Plants brought under cover for the winter meet a different problem: warm dry indoor air. Keep them in the coolest bright place available, well away from any heat source, and stand the pot on a tray of damp gravel or group it with other pots to hold a little humidity around the foliage.
Berries, and what keeps them on the plant
The berries follow the small green petal-less flowers that open in the warm months, and they take several weeks to swell and color. Once red they can hold on the plant for months, which is the plant's whole seasonal purpose in a shaded planting, but that persistence is conditional on the plant being comfortable at the root.
Two things knock berries off early. The first is dryness: any check to water supply while the fruit is swelling causes the plant to abandon the crop, and berries that shrivel and drop while still green almost always trace to a dry fortnight. The second is light. Berries in a position that catches direct sun fade and dull rather than deepening, so a shaded site keeps the color as well as protecting the leaves.
Do not remove the spent flower spikes. Unlike most flowering shrubs, the faded flower structure on this plant is exactly what becomes the fruit, and tidying it away removes the entire display before it starts.
What to write down for next year
Three records turn this plant from something you react to into something you can plan around. The first is the light in each position measured across the seasons, not once: note how many hours of direct sun the spot receives in early spring before a deciduous canopy leafs out, at midsummer, and again in autumn. Almost all scorch problems come from a position that is deep shade in high summer and full sun for six weeks in spring.
The second is the timing of the fruit. Note the week the green flower spikes appear, the week the berries begin to color, and the week they finally drop or shrivel. Kept over three seasons that tells you exactly which fortnight is the critical one for keeping the soil damp, and it lets you judge whether a poor berry year was a real problem or just a late season.
The third is a note of every episode of leaf browning: the date it was noticed, which side of the plant it was on, and what the weather had done in the preceding week. Sun scorch and wind burn produce nearly identical marks on the leaf, and without a dated note you will spend the following year fixing the wrong one.
Also record the lowest temperature your plant actually experienced in its position, not the figure for your area. A sheltered corner against a wall can run 5 to 8F (3 to 4C) warmer than open ground on a still frosty night, and that gap is often the difference between a plant that keeps its berries and one cut to the ground.
