Shiitake Log Problems: Competitor Fungi, Green Mold, Pests and Dead Logs

Most shiitake failures are competitors that got into the wood first. Learn to read the colors and growths on a log and to tell a slow log from a dead one.

Competitor fungi are the main enemy

A shiitake log is a race for a fixed amount of wood, and every other wood-rotting fungus in the air is a competitor. You win the race by giving your spawn a head start: cutting live wood, resting it only two weeks to two months, sealing every drill hole with wax, and keeping the bark intact. When a log fails, the cause is almost always that one of those four was missed and something else got established first.

Learn the common signs. Fan-shaped bracket growths in concentric gray and brown bands are turkey tail, an aggressive competitor that colonises damp shaded wood quickly. Small black flecks or crusts under the bark are usually one of the crust fungi. Fuzzy green patches, especially around drill holes, are green mold, which spreads fast in warm wet stagnant conditions. Orange or pink slime is bacterial and points to a log that has been kept saturated with no airflow.

The difficult truth is that once a competitor has taken a substantial share of a log, there is nothing to be done. There is no spray and no treatment. Isolate the log away from the healthy stack so it is not shedding spores over them, and either burn it or use it as a garden edging. Salvaging one bad log is not worth risking the rest of the stack.

Drying out is the quiet failure

Competitors are visible and dramatic. Drying is neither, and it kills more home logs than anything else. A log that spends a hot summer in dappled rather than deep shade, or under a roof overhang where rain never reaches, loses moisture from the outer sapwood, and the mycelium in that outer band dies without any outward sign at all. The log looks fine and simply never fruits again.

The two indicators to check are weight and cracks. A colonised log should feel heavy for its size and sound dull when knocked with a stick. If it rings hollow and feels light, it is too dry. Radial cracks opening at the cut ends are the second signal, and cracks wide enough to slip a finger into mean the drying went deep. Once bark has begun to peel from a dried log, that log is finished.

Recovering a moderately dry log is sometimes possible with a long cold soak of twenty-four hours followed by a return to deep shade and consistent watering, but do not expect a flush from it that season. Prevention is the whole game: deep shade, off the ground, out of the wind, and a weekly soak of the stack in a dry spell.

Do not confuse slow with dead. A log that shows white mycelium on the cut ends and still feels heavy is working, even if it has produced nothing for eighteen months. Break up a log only when the bark is loose, the wood is light, or a competitor has taken visible hold.

Animals and insects on the log

Slugs and snails will find a flush overnight in damp weather and rasp shallow craters into the caps. The damage is cosmetic but it opens the flesh to rot, so pick affected mushrooms first and use them promptly. Raising the logs on rails, keeping the surrounding ground clear of leaf litter, and picking flushes promptly rather than leaving mature caps on the bark for days all reduce the losses.

Fungus gnats and small flies lay eggs in mature and over-mature caps, and the larvae tunnel the flesh. Again the answer is timing: pick at the correct stage instead of leaving caps to flatten out on the log. Wood-boring beetles are a different matter. Round exit holes and fine sawdust mean larvae are tunneling the sapwood, which both removes food from the mycelium and creates dry channels through the log. A lightly attacked log carries on; a riddled one is done.

Squirrels, deer and mice sometimes take fresh mushrooms. If it becomes routine, a wire cage over the fruiting logs during the week of a flush is straightforward and only needs to be in place for that week.

  1. Inspect the stack every few weeks Walk the stack looking specifically at bark condition, cut ends and any new growth on the wood. Most problems are cheap to fix in the month they start and impossible to fix a year later.
  2. Quarantine anything suspect Move a log with visible bracket growth or spreading green mold well away from healthy logs on the same day you find it.
  3. Log the failures too Record which logs failed, what species of wood they were, when they were cut, and what you saw on them. The pattern in the failures is usually clearer than the pattern in the successes.
  4. Keep replacing stock Inoculate a few new logs every dormant season so that as older logs are exhausted or lost, replacements are already partway through their spawn run.

Never eat anything you did not inoculate

A shiitake log stands outdoors for years and other fungi will fruit on it, on the ground around it, and on nearby wood. Some of those are dangerous, and a few brown-capped, gilled woodland species resemble shiitake closely enough to catch out a confident eye. Eat only mushrooms growing from the drill rows of a log you inoculated yourself and can identify from your own records.

This is another argument for labeling. A tagged log with a known strain, a known inoculation season and a known species of wood removes all guesswork about what is growing on it. An unlabelled log found at the back of a stack, fruiting something brown, is not worth the risk under any circumstances.

Finally, apply the cooking rule to every harvest without exception. Cook shiitake thoroughly every time, and tell anyone you share the crop with to do the same.
