The split that actually matters
Forget color and height for a moment. The distinction that changes everything you do is whether the plant makes one stem with one terminal head, or branches from the leaf joints and carries many heads in sequence. Staking, spacing, feeding, cutting and seed harvesting all differ between the two, and most disappointment comes from treating one as though it were the other.
Single-stem types put everything into one flower, which is why they produce the huge heads and the plate-sized seed crops. Branching types spread the same resources across a dozen or more smaller heads that open over several weeks. Neither is better; they answer different questions.

Working out which you have
If the seed packet has gone missing, the plant tells you well before it flowers. From about knee height, look at the leaf joints on the main stem. A single-stem type keeps them tight and shows no shoots; a branching type starts pushing small shoots from the joints, and by the time the terminal bud appears there are already side buds developing below it.
That difference decides what you do next. On a single-stem plant you rub out any stray low shoot to keep everything going into the one head. On a branching plant you leave every shoot alone, because those shoots are the crop.
- Look at the leaf joints at knee height Run a finger down the stem from the growing tip. Small green shoots emerging where each leaf meets the stem means a branching type.
- Count the buds when the first one appears A single terminal bud with nothing below it is a single-stem plant. Several buds at different sizes down the stem means a branching one.
- Check whether the stem thickens or divides Single-stem types build one thick trunk, often two inches (5 cm) across at the base. Branching types stay slimmer and split their growth between shoots.
- Decide your pruning on the answer Single stem: remove side shoots. Branching: remove nothing. Getting this backwards halves what you get either way.
A single-stem type that loses its terminal bud to damage will sometimes branch as a fallback. The resulting heads are small and late, but the plant is not finished.
Height classes and what each one needs
Within both groups there is a wide range of heights, and height is what determines your staking and your position in the garden. Anything over five feet (1.5 m) needs support in all but the most sheltered gardens, and anything over eight feet (2.4 m) needs a driven post rather than a cane.
Height also decides where the plant can go. A nine foot (2.7 m) plant casts a long shadow, so it belongs at the shaded end of the bed rather than in the middle of it. Dwarf types under three feet (90 cm) are the ones that succeed in containers, because a tall type in a pot is top heavy and blows over regardless of how well you stake it.

Pollen-free types and what you give up
Some sunflowers are bred to shed no pollen. They were developed for cut flower use, because pollen dropping onto a tablecloth is a nuisance and pollen-free stems last longer in a vase without shedding. If you cut sunflowers for the house, these are noticeably tidier.
The trade is real, though. A pollen-free plant offers bees nectar but no pollen, so it does much less for your garden's insects, and it will not set seed from its own flowers. If your reason for growing sunflowers is a seed harvest or feeding pollinators, choose pollen-bearing types instead.

Growing both is the usual answer: a row of pollen-bearing plants for seed and insects, and a short row of pollen-free ones for cutting.
Matching the type to what you want
Decide the outcome first and the type follows. A seed harvest means a tall single-stem type at wide spacing, staked early. A long summer of cut flowers means a branching type sown in succession. A screen means medium height at close spacing in a single row. A container means a dwarf, and nothing else works.
Trying to get everything from one type is how people end up with tall plants that fall over and small heads that were never going to fill a seed jar. Two short rows of different types beat one compromise row every time.

Keep a note each year of which type you grew where, the spacing you used and the finished height. Two seasons of that is worth more than any description on a packet, because it is measured in your own soil and wind.
