Watering Taro: Why It Needs More Water Than Any Other Vegetable

Taro will not size up if the ground dries out, even once. It wants soil kept constantly wet from emergence until a few weeks before harvest, and there is no way to make up for a drought after the event.

Constantly wet is the whole method

Almost every vegetable page warns against overwatering. For taro, the warning runs the other way. This is a plant of swamp margins and flooded paddies, and in the garden it wants soil that stays wet to the depth of a spade for the entire growing season. Gardeners who treat it like a potato, watering when the surface dries, dig up corms the size of a walnut and conclude that taro is not worth growing.

The reason is mechanical as much as physiological. Those enormous leaves transpire at a rate no root system can keep up with unless water is freely available, and the moment supply falls short the plant closes down, drops its oldest leaves and stops enlarging the corm. Corm bulking does not resume at the same rate afterwards. A single week of drought in midsummer can cost you a third of the crop, and no amount of watering in autumn brings it back.

The practical test is simple: push a finger two inches (5 cm) into the soil beside a plant at any point in the season. If it comes out anything less than muddy, the plant is already short of water.

How much, and how often

In open ground, budget on two inches (50 mm) of water a week from emergence onward, rising to three inches (75 mm) a week in hot weather once the leaves are full size. That is roughly double what a tomato row asks for. Rain counts toward the total, but only rain that actually soaks in; a summer shower on a canopy of huge overlapping leaves largely runs off the foliage and misses the root zone altogether, which is why taro can be short of water on a day it rained.

Frequency matters less than never falling below the threshold. Daily watering of a small amount is worse than a heavy soak every second day, because taro roots run deep and a light sprinkle only wets the top inch. In hot dry weather, water in the evening so the ground has all night to take it up. If you have built the shallow trench described on the planting page, filling it and letting it drain twice a week is usually enough.

Standing water, flooding and growing in tubs

Taro is one of the very few garden vegetables that tolerates standing water at the roots. In wetland cultivation the plants grow with two to four inches (5 to 10 cm) of water over the soil surface all season, and gardens can copy that on a small scale. A half barrel or a large tub with no drainage holes, filled with a rich compost-heavy mix and topped up with water so the surface stays flooded, grows taro extremely well and removes the watering problem entirely.

There is one condition: the water must not go stagnant and hot in a small container in full sun. Change or top up the water in a tub at least twice a week so it stays fresh, and stand the tub where the pot itself gets some shade even if the leaves are in sun. In open ground, flooding is only workable on heavy soil that holds it; on anything free-draining you will be pouring water into subsoil all summer and it is better to line a trench instead.

  1. Use an undrained tub of at least ten gallons One plant per tub, filled with a mix of good soil and compost. A drainage hole defeats the purpose, so leave the tub sealed.
  2. Keep an inch or two of water on the surface Top up so there is standing water above the soil. In hot weather this can mean topping up every day.
  3. Refresh the water twice a week Let some overflow as you fill so the water does not turn foul. Stagnant hot water in a small tub encourages root rot and mosquito larvae.
  4. Feed liquid, little and often Nutrients leach fast in a flooded tub. A weak balanced liquid feed every two weeks through the growing season keeps the leaves large.

Mulch, and why it earns its keep here

Mulch matters more for taro than for most crops because it directly reduces how often you have to fill the trench. Four inches (10 cm) of straw, spent hay or shredded leaves spread over the row once the soil is thoroughly warm will roughly halve evaporation from the surface and keep the shallow feeder roots cool through the hottest weeks. Lay it after the plants have three leaves, not before, since mulch on cold spring soil keeps it cold.

The one caution is that a thick wet mulch against the base of the stems in a cool climate can encourage soft rot at the crown. Keep the mulch pulled back two or three inches (5 to 8 cm) from the stems themselves, and top it up in midsummer as it settles. When you come to earth the plants up, pull the mulch aside, draw the soil up, and put the mulch back over the new soil.

Reading the leaves, and when to stop watering

The leaves tell you what the corm is doing. Large, held high on upright stalks, and firm in the morning means the plant has enough water. Leaves that droop at their edges early in the day, or oldest leaves yellowing and falling one after another through midsummer, mean the supply has fallen short and the plant is shedding to survive. A brief midday droop in extreme heat is normal, but judge at dawn, and if the plant is still slack at dawn, water heavily that evening.

The exception to the whole watering policy comes at the end. Two to three weeks before you intend to dig, cut the water right back and then stop. Corms lifted from saturated ground bruise easily, carry mud into every crevice and go rotten in storage within weeks. Keep a note of the date you stopped watering alongside your harvest date and how the corms kept: after one season you will know exactly how long your own soil needs to firm up.

  1. Judge at dawn, not at midday Midday droop in heat is normal. Leaves that are still slack at first light mean the plant went to bed thirsty and needs a heavy soak.
  2. Treat early leaf loss as a water shortage Taro sheds its oldest leaves steadily, but losing more than one a week in midsummer means the plant is rationing. Increase water before you consider feeding.
  3. Water the ground, not the leaves The canopy sheds water sideways. Deliver water at the base of the plant, into the trench, so it reaches the roots rather than running off foliage.
  4. Stop two to three weeks before digging Let the ground dry so skins firm up. Record the date you stopped and how well that batch stored, and adjust next year.
