Curing Bracken Shoots: Wood Ash or Baking Soda, and the Honest Safety Picture

Raw bracken contains ptaquiloside, a recognized carcinogen. The alkaline soak and boil is what makes the shoots edible, and even then health authorities advise against eating bracken often.

Start with what is actually in the plant

Bracken contains ptaquiloside, a naturally occurring compound that is classed as a carcinogen. It is present throughout the plant and is at its highest concentration in exactly the part people eat: the young, actively growing shoot. This is not a fringe claim or a folk caution. It has been studied for decades, largely because bracken causes cancers in cattle that graze it, and the International Agency for Research on Cancer has evaluated bracken fern as possibly carcinogenic to humans.

Bracken also contains thiaminase, an enzyme that destroys thiamine, which is the mechanism behind bracken poisoning in horses and other animals. Thiaminase is heat-sensitive and thorough cooking deals with it. Ptaquiloside is the more serious problem and it is the reason the traditional preparation exists at all.

So the honest position is this: bracken shoots are a traditional food in several parts of the world, they are eaten by many people, and they are prepared in a specific way for a specific reason. That preparation substantially reduces ptaquiloside. It does not make the shoot into a lettuce leaf. Anyone deciding to eat bracken should be doing it knowing that, not in ignorance of it.

Public health bodies in several countries advise limiting or avoiding bracken in the diet, and some advise against it altogether. Pregnant people, children, and anyone who would be eating it frequently have the strongest reasons to avoid it. Treat prepared bracken as an occasional item, not a staple green, and if you are unsure, do not eat it.

What the alkaline soak actually does

Ptaquiloside is unstable in alkaline conditions and soluble in water. That combination is the whole basis of the preparation. Steeping the shoots in hot alkaline water, made either with wood ash or with sodium bicarbonate, breaks down a large part of the compound, and the long soak and rinse that follows carries the breakdown products and the remaining soluble material away in the water. Published measurements show the process removing the large majority of the ptaquiloside present, with the exact figure depending on alkalinity, temperature and how long the material is soaked.

This also explains why shortcuts do not work. A quick blanch in plain water is not alkaline and does not run long enough. Pickling raw shoots in vinegar is acidic, the opposite of what is required, and does nothing useful. Freezing raw shoots does nothing. Neither does drying them. Only the alkaline soak followed by thorough rinsing addresses the problem.

The preparation has a second, purely practical effect: it removes the harsh bitterness and the astringency of the raw shoot and softens the texture. That is why the result tastes acceptable and the raw shoot does not. If your prepared shoots still taste sharply bitter, the treatment was too weak or too short and should be repeated, which is a useful sensory check on a process you cannot otherwise measure at home.

Method one: wood ash

Wood ash is the older method and it produces the gentlest result, with firmer shoots that hold their shape better than the bicarbonate version. Use clean ash from untreated hardwood only. Never use ash from painted or treated timber, charcoal briquettes with binders, coal, or anything that has had accelerant on it, because whatever was in the fuel goes into your food.

  1. Prepare and trim the shoots Rub off the fine hairs, trim the dried cut ends, and lay the shoots in a single layer in a heatproof non-reactive container such as a stainless steel or enamel pan, or a ceramic dish. Do not use aluminum, which reacts badly with strong alkali.
  2. Dust with wood ash Scatter clean sieved wood ash generously over the shoots, using roughly a handful to a pound of shoots, or about 20 to 30 grams per 500 g. Every shoot should have ash on it. Uneven coverage gives unevenly treated shoots.
  3. Pour on water just off the boil Cover the shoots completely with water at around 195F (90C), that is water brought to the boil and left to stand a minute. Use enough that the shoots stay fully submerged; a plate laid on top keeps floaters down.
  4. Leave to stand overnight Cover and leave for eight to twelve hours as the water cools, undisturbed and at room temperature. This long steep is where most of the work happens, and cutting it short to two or three hours is the most common mistake.
  5. Rinse thoroughly in several changes of water Drain off the dark ash water, then rinse under running water and soak in fresh cold water for a further two to three hours, changing the water at least three times. Rinse until the water runs clear and the shoots no longer feel slippery.

Method two: baking soda, and the ratios that matter

Sodium bicarbonate is the practical modern substitute and it is what most people will actually use. It is faster and more consistent than ash, but it is easy to overdo: too much bicarbonate, or too long in it, turns the shoots into slime that falls apart when handled. The ratio is not a place to improvise.

The working method is to lay the trimmed shoots in a non-reactive pan, sprinkle bicarbonate over them at the rate given below, cover with water just off the boil, weight them down so they stay submerged, and leave to stand as the water cools. The steep is shorter than the ash method. Then drain, and soak in several changes of clean cold water until all trace of sliminess and bitterness has gone.

After either method the shoots should be firm but yielding, dark green to olive brown, with no sharp bitterness left. If they are still bitter, repeat the treatment at the same strength rather than increasing it. If they have gone slimy and limp, the bicarbonate was too strong or the steep too long, and the batch will not recover.

Storing prepared shoots, and keeping a record

Prepared, thoroughly rinsed shoots keep in the refrigerator submerged in clean cold water for three to four days if the water is changed daily. They freeze acceptably after preparation: drain well, pack in portions, and use within a few months, accepting that the texture softens. They do not keep raw and there is no shortcut around preparing them promptly after cutting.

Keep notes on each batch, because this is a process you run once a year and will otherwise re-learn from scratch every spring. Record the alkali used and the exact amount, the steep time, the number of rinses, and your honest verdict on the result: bitter, right, or slimy. Three seasons of that turns a vague traditional method into your own reliable recipe for your own water and your own shoots.

Record the source of the shoots too, meaning which part of the stand and how old the stand is. Batches from different ground behave differently in the pot, and knowing that a particular corner always needs the longer steep is exactly the kind of detail that no general instruction can give you.

Discard the ash or bicarbonate soaking water rather than reusing it or pouring it over garden beds you crop from. Everything the process removed from the shoots is in that water, so send it down the drain.
