Overview

Ronde de Nice is the round zucchini of Provence, an old French heirloom also called Rond de Nice, Round French, or French Round. The vigorous bush bears smooth, thin-skinned, light green spheres with tender cream-colored flesh that is a bit denser than elongated zucchini, so a stuffed fruit keeps its shape through cooking. That is its traditional job: hollowed, packed with an herbed rice or meat filling, and baked in tomato sauce in the Nicoise style. Pick at 1 to 2 inches for steaming whole, 3 to 4 inches for stuffing; beyond about 4 inches it turns seedy. Sow 1 inch deep in well-amended soil after frost, allowing 2 to 3 feet per plant, no support needed. Productive and heat tolerant.
