The stages that matter, and what you are looking at
A barley crop is not managed continuously. It has three or four moments where a decision changes the outcome, and long stretches between them where the correct action is to leave it alone. Knowing which stage you are looking at turns a field of anonymous grass into something you can read.
Tillering runs from about three weeks after emergence until the stems start to lengthen. The plant is low and grassy, throwing side shoots from the base, and each of those tillers is a potential ear. This is the only period when a little extra nitrogen does more good than harm, and the only period when hoeing between rows is worth doing.
Stem extension follows, and you can feel it before you see it. Squeeze a stem gently near the base between finger and thumb and you will find a small hard swelling traveling upward inside the sheath. That is the developing ear. From this point the crop is committed: the number of ears is fixed, the plant is putting everything into height, and it becomes progressively more vulnerable to wind. Booting, when the flag leaf swells around the ear, and then heading, when the ear pushes out with its awns fanning, follow within two to three weeks.

Nitrogen: less than you think
The commonest way to ruin a home barley crop is to feed it like a vegetable. Nitrogen produces long, soft, thin-walled straw and a top-heavy ear, and the combination lodges flat in the first summer storm. It also raises grain protein, which sounds like a good thing and is not: high-protein barley cooks to a mushier texture, mills into a stickier flour, and is useless for malting.
In practice, a garden bed that grew a well-fed crop last year needs no nitrogen at all. A tired bed wants a light dressing worked in before sowing, and at most one further light feed early in tillering if the crop is genuinely pale rather than merely less green than the lettuce next to it. Once stem extension has begun, feeding does nothing useful and everything harmful, because the number of ears is already fixed and the only thing left to add is height.
Potassium is the nutrient worth being generous with, because it thickens cell walls and stiffens straw. Wood ash raked into the surface before sowing suits barley particularly well: it supplies potassium and raises pH, and barley is the cereal that most enjoys both. On a bed that has lodged in a previous year, ash and no nitrogen is the whole correction.
If the crop is already tall, dark green and soft at the base by booting, you have overfed it. Do not add anything further, get support in immediately, and expect to cut earlier than planned, because that crop will go down in the first heavy rain after the ears fill.
Water, and the two moments it counts
Barley is a dry-ground crop and its roots go looking for water if you let them. Watering a seedling stand on a schedule produces a shallow-rooted crop that then wilts the moment you stop, so through the first month you water only if the bed is dry two inches (5 cm) down. From tillering onward, ordinary rainfall is usually enough, and this is one of the few crops where doing nothing is an active technique.
Two moments justify intervention. The first is booting, when the ear is forming inside the flag leaf sheath: drought here reduces the number of grains that will set in each ear, and the loss is permanent. The second is early grain fill, when the grain is at the milky stage: drought here shrivels grain that has already set. If the soil is genuinely dry at either point, water deeply once, six to eight gallons per square yard (25 to 35 liters per square meter), rather than sprinkling daily.
Water at the base, not overhead, and water in the morning. Barley foliage held wet overnight is how powdery mildew and the leaf spot diseases establish, and a dense stand dries slowly. Once the straw begins yellowing from the base, stop watering entirely. Water at the ripening stage delays the harvest, softens the straw at exactly the point where the ears are heaviest, and gains you nothing at all.
Support before the ears get heavy
A ripe barley ear is heavy, held on a hollow straw, often with a long awn catching the wind like a sail. A stand that has gone flat is not a cosmetic problem: the ears lie on damp soil, sprout in the head, feed slugs and birds, and are miserable to cut. Once down, a crop rarely stands up again. All the useful work happens before it happens.
For a garden block, the effective method is a perimeter of canes with string run around and across the bed at two heights, roughly at knee height and again at hip height, forming a grid the crop grows up through. Put it in during stem extension, before the crop is tall enough to need it. Threading string through a crop that is already at full height damages leaves and knocks pollen off the ears.
Wind exposure matters more than fertility on many sites. A block in the open at the top of a garden goes down in conditions that a sheltered block in the lee of a hedge shrugs off. If the same bed lodges two years running, either move the crop, sow it thicker so the stand supports itself, or cut back further on nitrogen. Those three fixes are effective in that order.
- Set corner canes as soon as the stems begin to lengthen Stout canes at each corner and every three feet (1 m) along the edges of the block, pushed at least eight inches (20 cm) into firm soil so they hold against wind loading a full crop.
- Run string around the perimeter at knee height Pull it taut. This first tier catches the whole block leaning as a unit, which is how a stand usually starts to go over.
- Add a second tier at hip height as the crop rises Do this while you can still lay the string on top of the canopy rather than pushing it through. Two tiers hold a crop that one tier lets fold over.
- Cross the block with string on wider beds On anything more than about four feet (1.2 m) across, run two or three lines across the middle at each height. Without them the center of the block goes down while the edges stand.
- Walk the block after every storm Lift and re-tie anything leaning within a day or two. A leaning crop can be saved. A crop that has been flat on wet soil for a week has already begun to sprout in the ear.
What to record through the season
Write down the date the crop begins tillering, the date the ears are fully out, and the date the straw starts to yellow from the base. Those three dates, set against your sowing date, are the real length of each stage in your garden and they will not match any published table, because they depend on your soil and your spring.
Record anything you fed and when, and record every time the crop leaned or went down, with the date and the weather. Note which part of the block went first, because lodging almost always starts in the same spot, usually the most fertile or most exposed corner, and knowing that lets you sow that corner thicker or feed it less next year rather than treating the whole bed the same way.
