Types of Barley: Hulled and Naked, Two Row and Six Row, Winter and Spring

The one distinction that decides whether a home barley crop is edible is hulled against naked. Everything else, row number, sowing habit and awns, changes how the crop grows rather than whether you can eat it.

Hulled against naked: the choice that decides everything

Almost all barley grown in the world is hulled, which means the husk is cemented to the grain by a thin layer that does not let go during threshing. You can thresh hulled barley perfectly, winnow it clean, and still be holding grain you cannot cook or mill, because each kernel is wearing a tough fibrous jacket that has to be abraded off. That abrasion is pearling, and it is done industrially by spinning grain against a carborundum wheel. There is no kitchen equivalent that works well. This catches out more home growers than any other feature of the crop.

Naked barley, sometimes sold as hull-less barley, carries a loose husk that separates in threshing exactly the way wheat does. You flail it, winnow it, and what falls into the bucket is food. It yields perhaps ten to fifteen percent less than a hulled crop of the same size, and the bare grain is more easily damaged in handling and stores slightly less well. Every one of those costs is trivial next to the difference between grain you can eat and grain you cannot.

So the rule for a garden is simple and worth stating flatly: if you intend to eat what you grow, obtain naked barley seed and confirm it before you sow. Seed catalogues state it plainly when a type is naked, because it is the selling point. If the description says nothing at all about hulls, assume hulled. Grain bought as animal feed or as malting barley from a farm supplier is hulled essentially without exception, and sowing a handful of it because it was cheap is how people end up with a beautiful crop and a bucket of inedible grain in autumn.

Sprouting a spoonful before you commit ground is the honest test. Soak twenty grains overnight, and once they chit, rub a few between your palms. Naked grain sheds its husk under light pressure. Hulled grain stays jacketed no matter how hard you rub.

Two row and six row

Barley sets its grain in triplets along the ear. In six-row barley all three of each triplet fill, so the ear carries six vertical ranks of grain and looks dense and squarish in cross section. In two-row barley only the central floret of each triplet fills, leaving two ranks of grain and two rows of sterile husks, which gives a flat ear that hangs over as it fills. Both are easy to tell apart in the field once the ears are out, and the shape is stable enough to identify what you are actually growing if a packet was unlabelled.

The practical difference is grain size and evenness. Two-row ears carry fewer grains but each is plumper and the sample is more uniform, which is why two-row types dominate malting. Six-row ears carry more grain, smaller and more variable, with higher protein, which suits feed and suits flour. For eating at home either works, and a six-row naked type is often the more generous choice in a small bed because more of the ear is grain.

Six-row types also tend to tiller a little less aggressively and to stand slightly worse when heavily fed, because the fuller ear is simply heavier at the top of the same straw. If your garden is windy and open, that weight matters more than the extra grain count. Neither difference is large enough to override the hulled or naked question.

Winter and spring habit

Winter barley needs a cold spell before it will run up to flower, so it is sown in autumn, spends the cold months as a low rosette of tillers, and comes away fast in early spring. It ripens earlier than any other small grain in the garden, typically two to three weeks ahead of winter wheat, and that early clearing is a real advantage if you want the ground back for a summer crop. It also builds a much larger root system over winter and copes with a dry early summer better as a result.

Spring barley has no cold requirement, goes in as soon as the soil can be worked, and takes roughly ninety to a hundred days from sowing to a ripe ear. It is the safer choice in cold gardens, because winter barley is the least hardy of the winter cereals. Bare ground and a run near 5F (minus 15C) will kill a good share of a winter stand, where winter wheat and rye at the same site come through. Reliable snow cover changes that arithmetic completely, since snow insulates the crown.

Facultative types exist that will do either, and they are useful where winters are mild and unpredictable. Sown in autumn they behave like winter barley without needing a hard vernalisation to flower, which means a warm winter does not leave the crop stuck in leaf all summer. If you have ever had an autumn-sown cereal refuse to produce ears, that is the failure a facultative type avoids.

Awned, awnless and hooded ears

The long bristles on a barley ear are awns, and on most barley they are long, stiff and finely barbed along their length. Those barbs are one-way. Awns work into shirt cuffs, into gloves, down collars and into skin while you cut and thresh, and they are genuinely unpleasant to handle in quantity. If you have only ever handled wheat, the difference is larger than you expect and it shapes how you dress for the harvest.

Awnless and hooded types exist, and the hooded form carries a small three-pronged appendage in place of the bristle. Both are grown mainly for hay and forage, where awns would injure grazing animals, and both are markedly kinder to handle. They also give slightly lower grain yield, because the awn is photosynthetically active during grain fill and contributes to the weight of the kernel. If your reason for growing barley is straw, fodder or a green manure rather than grain, an awnless type is worth seeking out.

For grain, accept the awns and dress for them. Long sleeves buttoned at the wrist, a collar you can close, and gloves make the harvest ordinary rather than miserable, and there is no shortcut around that.

Writing down what you actually grew

Record four things about the seed the day you sow: hulled or naked, two-row or six-row, winter or spring habit, and where the seed came from. That short note is the single most valuable record in a grain year, because in late summer, holding a bucket of threshed grain, it tells you immediately whether a stubborn husk is a defect in your threshing or simply the type you sowed.

Add a sketch of the block with the sowing date on it, and if you grow two types side by side, mark which end is which and photograph the ears once they are fully out. Two-row and six-row ears are unmistakable in a photograph and impossible to reconstruct from memory a year later. Keep a handful of the cleaned grain from the best block as next season's seed and label it with the same four facts, and you never have to guess again.
