Overview

Black Aztec (also spelled Black Aztek) is an old dual-purpose corn with roots in Mexico and the American Southwest going back to at least the 1860s. Picked young, the kernels are pale and milky-sweet and the ears can be eaten fresh; left to mature, they darken through purple to a glossy grey-black and are ground for flour. The 8-inch ears also make striking autumn decorations. It matures late, so sow in blocks of several rows as soon as the soil is warm.
