Pingtung Long, also sold as Ping Tung, is a Taiwanese heirloom of the long Asian type, early to mid-season, with light purple fruit around 12 inches that darkens as it matures. It is noted for tolerating stress, especially heat and humidity, which makes it dependable in the Gulf South. Skin is thin and tender, seeds are scarce and the flesh is sweet and mild, so it needs no peeling and softens quickly in a stir-fry. Start seed indoors 6 to 8 weeks before transplanting to full sun in rich soil, and stake the plants once the long fruit begins to weigh the branches down. Pick while the color is still vivid lavender-purple.
