Overview
Bride is an early Chinese-derived hybrid with slender fruit about 8 by 1.5 inches, emerging ivory and taking on rose and white streaks as it fills, with a pure white interior and green calyx. Compact, well-branched plants set two or three fruits per node instead of one large fruit, giving a steady succession through hot weather. Start indoors 6 to 8 weeks before transplanting into warm, fertile soil once nights stay above 55F. Pick at 6 to 8 inches while the streaking is light and the flesh is tender, and handle carefully, since the thin skin bruises; cook soon after picking.
