Water is the whole job
A fuki colony asks for very little attention, but the one thing it will not forgive is drying out. The leaves are large, thin and held on stalks that are essentially water columns, so the plant transpires heavily and has no drought strategy beyond wilting. A colony that wilts hard two or three times in a season produces short stalks with a woody core, and those are the stalks that are unpleasant to peel and stringy to eat.
In a genuinely damp site, rainfall does the work and you may water only in a dry spell. In an ordinary garden bed, plan to give the area a thorough soak once or twice a week from the time leaves are fully up until they start to yellow in autumn. Aim for the equivalent of an inch (2.5 cm) of rain per week, delivered in one or two long waterings rather than daily sprinkles, so that the moisture reaches the rhizome layer.
Check by feel rather than by schedule. Push a finger through the mulch and into the soil; if the top two inches (5 cm) are dry, water. Midday wilting that recovers by evening is normal in hot weather and not a reason to water twice a day. Leaves that are still limp at dawn mean the ground is genuinely dry.
Mulch does more for this crop than feeding does. Three inches (8 cm) of leaf mold, compost or wood chips over the whole colony each spring keeps the surface damp, keeps the soil cool, and suppresses the weeds that would otherwise get established before the fuki leaves close over.
Feeding: light, early and organic
Fuki grown in ground that gets an annual mulch usually needs no fertilizer at all. Where the soil is thin or the colony has been cut hard for several years, a single feed in early spring as the leaves unfurl is enough. Use a balanced granular fertilizer at about two ounces per square yard (60 g per sq m), or a two inch (5 cm) topdressing of well-rotted manure, and water it in.
Do not feed after midsummer. Late nitrogen pushes soft leaf growth that goes down to mush at the first frost and encourages the crown rots that follow a wet autumn. It also does nothing for next spring's stalks, which are built from reserves the rhizome lays down in late summer, not from what you apply in autumn.
Overfeeding shows up as very large, floppy leaves on stalks that cannot hold them, with plants collapsing sideways after rain. If that happens, skip feeding entirely for two seasons and keep mulching.
The annual edge patrol
Containment is not a one-off job at planting. Rhizomes reach the barrier or the intended edge and then run along it looking for a way out, so the colony needs a check twice a year: once in early spring before the leaves obscure everything, and once in autumn after they have died back.
- Walk the edge and look for outliers Any leaf cluster standing clear of the main mass by more than a few inches is an escape. Mark it with a cane before you start digging so you can find it again once you disturb the ground.
- Trace the runner back, do not just pull the top Snapping off the leaves leaves the rhizome intact and it resprouts within weeks. Dig alongside the shoot, find the connecting rhizome, and follow it back toward the colony.
- Cut at the parent end and lift the whole run Sever the runner where it leaves the main colony and lift the entire length out in one piece. Any section left behind will bud from the cut end.
- Check the barrier top for bridging Rake the mulch back from the inside of the barrier and look for rhizomes running horizontally over the rim. Pull them back inside and top the barrier up if it has settled below the soil line.
- Bag the removed pieces, do not compost them Rhizome fragments survive a home compost pile easily. Dry them on a hard surface until they are crisp, or dispose of them with household waste.
Thinning and renewal
Left alone, a colony thickens until the leaf clusters are shoulder to shoulder and every stalk is thin. The crop quality drops noticeably from around the fifth year. The fix is to lift and discard roughly a third of the rhizome mass every three or four years in late winter, working across the bed in a strip rather than digging everything at once, so the remaining plants have room to thicken their stalks again.
The table below is a practical calendar for the year. It assumes a temperate climate with a real winter dormancy; in a mild maritime area the leaves may hang on later into autumn.

Keep a note of stalk thickness
The one measurement worth writing down each year is the diameter of a typical harvested stalk at its base, taken on the same date-equivalent point in the season. Half an inch (12 mm) or better means the colony is well fed and well watered. A drop toward a quarter inch (6 mm) across the whole bed means it is either too crowded or too dry, and that tells you whether the next job is thinning or irrigation.
Alongside that, record the date you first watered and the total number of waterings. In a wet year the figure will be near zero and in a dry one it may be twenty, and having both on record makes it obvious how much of the crop quality is down to the season rather than anything you did.
Finally, note the date of the annual edge patrol and how far the furthest runner had traveled. Two or three years of that number tells you whether once-a-year checking is enough for your site or whether the barrier needs work.
