The poisonous relatives, and why foraging is out
Start here, because nothing else on this page comes close in importance. Water dropwort belongs to a family that contains several of the deadliest plants in the temperate world. Hemlock water dropwort in particular is a common plant of ditches, stream sides and wet meadows over large parts of Europe, and its root contains a toxin that has repeatedly killed adults who ate a small amount by mistake. Water hemlock in North America is comparably dangerous. All of them share the same divided, parsley-like foliage, the same hollow grooved stems and the same flat umbrella-shaped heads of tiny white flowers.
There is no safe home method for telling them apart in the field. The differences that botanists use are in root structure and in fine details of the seed, they are not visible on a young leafy plant, and hybrid confusion with other wet-ground umbellifers makes casual identification worse rather than better. This is why the entire discipline of growing this crop reduces to one rule: buy a labeled plant or seed from a supplier who sells it as an edible vegetable, plant it yourself in a place you can point to, and never eat a leaf from a wild stand, a pond margin, or an unlabelled patch that came with the garden.

If anyone has eaten a wet-ground plant of this type from an uncertain source and feels unwell, treat it as a medical emergency and contact emergency services or a poison center immediately rather than waiting to see how it develops.
Keeping the crop unambiguous
The practical risk in a home garden is not that you mistake a wild plant for your crop on a walk. It is that a self-sown umbellifer establishes in the same wet corner as your patch and gets cut along with it. Wet ground is exactly where these plants seed themselves, and a young rosette of the wrong species sitting inside a block of the right one is invisible once the block closes up.
So keep the crop in a container or a clearly edged bed, weed anything you did not plant out of it while it is small, and go through the patch properly at the start of each season when the growth is short and you can see the ground. If your plants have escaped and rooted outside their boundary, either lift them back inside it or dig them out, but stop harvesting from the fringe, because a spreading edge in wet ground is precisely where you lose track of what is what.
- Inspect the bed at the start of each season While the growth is short, go over the whole surface and pull out every plant you did not put there, whatever it looks like. Wet ground recruits volunteers constantly.
- Keep a hard boundary you can see A container rim, a sunken bucket or boards standing proud of the soil. If you cannot point at the edge of the crop, you cannot be sure of the crop.
- Re-label every spring A permanent marker on a plastic tag lasts about a season outdoors. Use an engraved or scratched label, or a stake fixed at the corner of the bed.
Pests you will actually meet
The pest list is short and none of it is serious. Aphids are the main one, clustering on soft new growth after a hard cut and after a heavy feed. Slugs and snails work along the wet margins and shred the lowest leaves, and being an aquatic margin, this is exactly the habitat they like. Leaf miners occasionally cut pale winding tunnels through individual leaflets, and in an outdoor tray you may find pond snails grazing the stems.
The response to almost all of it is the same, and it is the response you were going to make anyway: shear the block to 2 inches (5 cm) and let it regrow clean. Because the crop is cut every few weeks in any case, a pest problem rarely has time to build. Avoid sprays entirely on a crop you cut and eat this often, and be careful with slug pellets and any other treatment around standing water, where they end up in the water the plant is sitting in.

Rots, sour water and other cultural problems
Most of what looks like disease on this plant is a water problem. Brown slimy lower stems mean warm water that has been standing too long, usually in a shallow tray topped up rather than emptied through a hot spell. Crown rot means the growing point has been buried under standing water in warm weather instead of sitting at surface level. Browning leaf margins within a day or two mean the tray went dry, which on this crop is a direct injury rather than a bit of stress.
Fungal leaf spots turn up occasionally on crowded stagnant clumps and disappear as soon as the block is cut and the water refreshed. Rust is rare. In every case the treatment is the same trio: cut the block hard, empty and refill the water rather than topping it up, and clear all floating debris off the surface. If a whole clump has gone woody and sour in midsummer, do not nurse it; take clean young rooted stolon tufts from the edge, start a fresh pot, and compost the rest.

Escape into waterways, and a record worth keeping
The last hazard is to everything downstream rather than to you. Every node on every stolon roots, so a fragment washed into a ditch or dropped on a pond bank becomes a new colony, and in several regions this plant is listed as an invasive wetland species with restrictions on planting or moving it. Check what your local authority says before planting near a natural watercourse, keep the crop in a container if there is any doubt, and never dispose of trimmings, old compost or thinnings in wet ground.
Two things are worth writing down each season, and they take a minute. First, the source and planting date of the crop, kept permanently, so its identity is never a matter of memory. Second, the dates on which problems first appeared: the first aphids, the first slug damage, the day the water first went sour. After a season those first-appearance dates tell you when to change your routine rather than leaving you to react after the damage is done.
