Where the fruit actually comes from
Kiwi fruits on the current season's shoots, and those shoots only arise from wood that grew last year. That single rule governs everything you cut. Wood three years old and older is plumbing: it moves water and holds the vine up, but it will not fruit. If you never cut anything, the fruiting zone marches outward year by year until all your crop is hanging off the far edge of the pergola out of reach, and the middle is a solid mat of dead and unproductive wood.
So the shape you are aiming for is deliberately simple: one permanent trunk, one or two permanent arms running along the top wire in opposite directions, and, coming off those arms, a set of replaceable canes spaced along their length. Each of those canes fruits for one season and is then cut out and replaced by a new one growing near its base. It is the same replacement logic as a grape, done on a much larger scale.

Prune in the middle of dormancy, not at the end of it
Kiwi bleeds sap prodigiously from late winter cuts. Once the roots start pushing in late winter, a pruning wound will run with clear sap for days, sometimes to the point of dripping steadily, and although a vine rarely dies of it the wounds heal badly and become an entry point for disease. Do your structural pruning in the middle of dormancy, well after leaf fall and well before buds start to swell.
If you missed that window and buds are already fattening, the safest course is to leave the big cuts until after the vine is in full leaf in early summer, when it will not bleed. Small thinning cuts can be made at almost any time. The one thing not to do is take out a major arm just as the sap rises.
Work when the wood is dry and above freezing. Cutting frozen kiwi wood shatters it, and the crushed ends do not seal.
Kiwi prunings are heavy and whippy. Cut long canes into short lengths as you release them rather than dragging a twenty-foot cane out of a canopy, which tears bark off whatever it is wrapped around on the way.
The winter cut, in order
Expect to remove somewhere between half and three-quarters of last season's growth on an established vine. That looks brutal the first time. It is not: an unpruned kiwi shades itself out, fruits at the perimeter only, and gives small fruit everywhere.
- Cut out everything that has already fruited Fruited canes are easy to identify in winter by the short dried stubs where fruit stalks were attached. Follow each one back and remove it, cutting to a strong new cane near the arm, or to two buds if there is no replacement there.
- Untangle and remove the twiners Kiwi shoots wrap around each other and around the wires in tight coils. Anything spiralled around another cane, around a wire, or around itself goes out. Coils strangle the wood they grip and are impossible to work with later.
- Choose the replacement canes Keep straight, pencil-thick or slightly thicker canes that grew last season near the arms, spaced about twelve to eighteen inches (30 to 45 cm) apart along each arm and alternating on either side. Pass over very thick, flat-sided, hollow-looking canes; those are water shoots and fruit poorly.
- Shorten what you keep Tie each retained cane along the wire and cut it back to eight to twelve buds, roughly three to four feet (90 to 120 cm). Left full length it will exhaust itself and fruit only at the tip.
- Clear the trunk and the head Rub or cut off every shoot on the trunk below the arms, and thin the crowded cluster of stubs where the trunk meets the arms. That head is where congestion and rot start.
- Stand back and look for light When you are done you should be able to see a lot of sky through the canopy, and follow any cane by eye from the arm to its tip without losing it. If you cannot, you have not finished.
Summer pruning keeps the winter job small
A kiwi in a good season puts on growth fast enough to watch. Left to itself from spring to autumn it will bury the fruit, choke the arms and reach across to whatever else is growing nearby. Three or four passes through summer, each taking twenty minutes, save hours in winter and make a real difference to fruit size and sugar.
The first pass comes shortly after fruit set. Pinch each fruiting shoot about four to six leaves beyond the last fruit. Those leaves feed the fruit; anything past them mostly makes shade. Non-fruiting shoots that you want as next year's canes get tipped when they run beyond the structure, not removed, because you need them.
Later passes are about tangle. Any shoot that has started to coil around another, any shoot growing straight down into the fruiting zone, and any shoot from the trunk or an old arm comes off. Keep enough leaf over the fruit to shade it, though: kiwi fruit exposed to full afternoon sun scalds, and so does the bark on the trunk of a young vine, which is worth wrapping or shading in a hot climate.

The male vine is pruned differently
The male exists to produce pollen, so it is pruned for flowers rather than for fruiting wood, and it is pruned at a different time of year. Cut it back hard immediately after it has finished flowering in early summer, taking the flowered shoots back to a few buds. That gives it all season to grow new wood, which is what will carry next spring's flowers.
Doing it then also stops the male, which is typically more vigorous than the female, from swamping her. If the two share a structure, keep the male confined to a defined portion of it and be ruthless about anything that crosses the line. In winter, give the male only a light tidy: remove dead and tangled wood and leave the rest, because you cannot tell flower buds from growth buds by eye and hard winter cutting on a male costs you pollen at exactly the moment you need it.
Note what you cut and what it gave you
Kiwi pruning decisions only prove themselves a year later, which makes them worth writing down. Record the date you pruned, roughly how many canes you left on each arm, and the length you cut them to. Then at harvest note the crop from that vine and the average fruit size.
After two or three seasons the numbers tell you whether your vine wants more canes or fewer. Too many canes gives a heavy set of small fruit that ripens late; too few gives large fruit and a lot of vegetative growth you then have to cut off. There is no universal correct number, only the number that suits your vine on your soil, and the record is how you find it.
