Overview
Principe, better known as Principe Borghese, is an Italian heirloom grown mainly for drying. The red fruit is small, one to two ounces, pear shaped with a pointed tip, dry fleshed with few seeds, and resists cracking. Plants are determinate and open-pollinated, so the crop comes in a concentrated flush that suits cutting the fruit and drying it in the sun or a dehydrator. It also works in sauce, though fresh eating is not its strength.
