Overview
Sibley, also known as Pikes Peak, is a Hubbard-type Cucurbita maxima released in 1887 by Hiram Sibley & Company of Rochester, New York. Vines run 12 to 15 ft and bear teardrop-shaped, slate-blue, shallow-ribbed fruit with a hard skin, 10 to 12 inches by 8 to 9 inches and 8 to 10 lb, with orange flesh that many growers rate among the sweetest and driest of any winter squash. It keeps well, and flavor improves in storage. About 110 to 120 days, so sow early in hills with plenty of room. Cure 2 to 3 weeks before storing.
