Overview

Red Kuri is a Japanese-style small hubbard, also sold under the names Orange Hokkaido, Baby Red Hubbard and Uchiki Kuri. The teardrop fruit weighs roughly 3 to 7 pounds and carries a scarlet to reddish-orange rind over smooth, creamy-yellow to orange flesh with a chestnut-like sweetness and a drier, denser texture than butternut or acorn. Each vine sets two or three fruit. Sow after frost once the soil is warm, grow in full sun and leave the fruit until the vine withers and the rind is hard. After a couple of weeks of curing it stores about five to six months. The dry flesh thickens soups and purees on its own and suits simmered Japanese dishes, and the manageable size is right for a single household meal.
