Overview
Australian Butter is a lesser-known heirloom Cucurbita maxima with large, pumpkin-shaped fruit of 12 to 15 pounds, a hard pale buff-orange shell and a very small seed cavity. The deep orange flesh is dense, dry and sweet enough for dessert use, and the fruit is an excellent keeper. It needs a long warm season and wide spacing since one vine can cover a lot of ground while setting several fruit. Sow in compost-enriched hills after frost, harvest when the rind is fully hard and the vine dies back, and cure one to two weeks in a warm, airy place. About 90 days.
