Overview
Delicata, the sweet potato squash, has cream-colored skin marked with dark green stripes and flecks, an oblong shape about 7 to 8 inches long by 3 inches wide, and a weight of roughly 1.5 to 2 pounds. The fine-grained orange flesh is very sweet and reminds many people of sweet potato, and because the skin is thin it can be eaten without peeling. Johnny's strain runs short vines of about 3 to 4 feet that can set six or seven fruit each, and the plants resist powdery mildew. Sow into warm soil after frost, keep moisture even through fruit set, and harvest once the rind is hard and the stripes have deepened. A week or two of curing sharpens the sweetness and it keeps around four months. Excellent stuffed or baked in rings.
