Overview
Vegetable Spaghetti is the classic spaghetti squash, a Cucurbita pepo whose cooked flesh pulls apart into pasta-like strands with a mild, slightly sweet, faintly crunchy character. Vines of about 10 feet carry four or five oblong fruit 8 to 10 inches long and 3 to 5 pounds, cream at first and deep golden-yellow when ripe. Sow after frost when soil reaches 70F, in full sun and fertile, well-drained ground. Let the fruit hang until the rind is hard and fully yellow, cure two weeks at room temperature, and it keeps up to about three months. Halve, bake cut side down and scrape out the strands with a fork for a low-carbohydrate base for sauces.
