Overview
Blue Ballet from Johnny's Selected Seeds (1996) is a hubbard cut down to dinner size. The smooth-skinned, blue-gray teardrop fruit weighs about 4 to 6 pounds and holds bright orange flesh that is fiberless, dense, dry and sweet, with the full hubbard flavor but none of the struggle of cutting a giant Blue Hubbard. Vines are compact, needing 4 to 6 feet, and each sets about two fruit. Sow an inch deep after frost in warm, compost-enriched soil. Cure ten days and it stores well for three to four months. Roast it halved with butter, or stuff it, since the size suits a single meal.
