Overview
Chirimen is an old Japanese buttercup-type squash of the Yokohama group, grown since the Edo period and named for the crinkled crepe fabric its warty, deeply ribbed rind resembles. Fruit are flattened globes of 5 to 8 pounds that start dark green and finish a dull bronze-orange; the flesh is deep orange, moist and thick, with a sweetness in the kabocha and butternut range. The vines are remarkably productive, capable of setting eight or more fruit each, but they need a long season, about 95 to 120 days, so start as soon as frost is past and the soil is warm, and give them plenty of room. Cure well and it keeps for months in a cool, dry spot.
