Overview
Delica, bred by Takii and also known as Ebisu Kuri, is the dark green, deeply lobed kabocha that most North American shoppers recognize as fresh kabocha. Fruit are flattened globes 6 to 8 inches across, about 3 to 4 pounds, with deep yellow to orange flesh that is dry, dense and nutty-sweet in the chestnut style. Fruit are very uniform and store well, and the vigorous vines mature relatively early for a kabocha, around 105 days. Sow directly once the soil is warm and frost is gone, space hills widely, keep moisture steady during fruit set, then taper off as the rinds harden. Cure for a week or two in a warm spot, after which it keeps two to three months in cool storage.
