Overview
White Icicle is an heirloom radish grown in America since Victorian times, producing slender, pointed, snow-white roots 4 to 6 inches long with short to medium tops. The flesh is crisp and milder than round red types at the same stage, and the roots stay tender at a larger size, though they are best pulled young. Grow it like a carrot in loose soil: sow a quarter inch deep, thin to 2 to 3 inches, in early spring or in fall. It matures far faster than daikon, at about 28 to 30 days. Use it raw in salads, cut into sticks, in Japanese-style pickles, or in a stir-fry, where the pieces keep their shape.
