One bulb in, a clump of ten out
Pickling shallot is grown from small dormant bulbs, not from seed. Each bulb you push into the ground in autumn divides underground through the cool months, and by the time the tops die back in early summer that single bulb has become a tight clump of ten to twenty small bulbs sharing one base. Nothing you do makes the division happen; it is simply what the plant does. What you control is how much room the clump has to do it in.
That multiplication rate is the whole reason the spacing rules look generous for such a small plant. A gardener who spaces these bulbs like garlic ends up with clumps pressed shoulder to shoulder by spring, and crowded clumps give you a larger number of undersized, misshapen bulbs that are awkward to trim and slow to clean. Space for the clump you will lift, not for the bulb you are holding.
Buy or save firm, dry bulbs about the size of a fingernail with the papery skin intact. A bulb that has already sprouted in store will still grow, but it splits into fewer offsets because it has spent reserves pushing a shoot with no roots to support it.
Poor sandy ground is an advantage, not a compromise
This is one of the few vegetables that genuinely prefers thin ground. It was grown for generations on sand dunes and stony field edges where almost nothing else would hold, and it produces its firmest, crispest bulbs on light, sharply drained, low-fertility soil. Rich, heavy, freshly manured ground gives you the opposite: fat soft bulbs with a loose skin, a watery texture, and a strong tendency to rot in the ground over winter.
So give it the corner of the plot you have been apologising for. A sandy or gravelly bed, a raised bed filled with a lean mix, or the strip along a path where the soil is shallow all suit it better than your best vegetable ground. If your soil is heavy clay, work in coarse grit or sharp sand and raise the bed four to six inches (10 to 15 cm) rather than trying to feed the crop into performing.
Aim for a pH between 5.5 and 7.0, which is a wider tolerance than most alliums accept. Skip manure entirely and skip nitrogen-heavy fertilizer. If the ground has grown a hungry crop the previous season and looks exhausted, that is close to ideal without you doing anything at all.

Plant in autumn, shallow, point upwards
Plant once the summer heat has broken and the soil at planting depth has fallen to around 68F (20C) and is still dropping. Bulbs pushed into warm soil sit without rooting and rot from the base plate. There is a wide window here, running through most of autumn, and planting on the late side costs you only a little size at lifting.
Depth is where most first-year gardeners go wrong. Set each bulb so its shoulders are covered and the pointed tip is level with the surface or barely under it, roughly one inch (2.5 cm) of soil over the widest part at most. Deep planting produces a long white neck that is slow to emerge and rots readily in a wet winter, and it also puts the growing point beyond the reach of the hilling you will do later.
Press each bulb in with your thumb rather than dropping it into a dibbed hole. The base plate has to sit in firm contact with soil; an air pocket underneath it is the most common reason a bulb never roots at all.
- Fork the bed over and break any pan Loosen the top eight inches (20 cm) and remove stones large enough to deflect a growing clump. The roots are fine and shallow and will not force their way through compacted ground.
- Add grit rather than compost On heavy soil, work in a bucket of coarse grit or sharp sand per square yard (square meter) and raise the bed. Resist the urge to add compost or manure; lean ground is what makes this crop firm.
- Set bulbs six inches (15 cm) apart in the row Space rows twelve inches (30 cm) apart so you can hoe and hill between them later. Plant one bulb per station, never two, because two clumps in one place will fight each other by spring.
- Push each bulb in point upwards Cover the shoulders, leave the tip showing, and firm the soil around the base with your fingers so the bulb cannot lift as roots push down.
- Water once and then leave it One thorough watering settles the soil against the base plates. After that, keep the bed only just damp until green tips show, usually two to four weeks. Cold wet bare soil with no leaves drawing water from it is where rot starts.
- Mark both ends of the row Push in a label or cane at each end before anything appears above ground. An unmarked autumn row gets hoed through or dug over more often than you would believe.
Decide now whether you are growing for one year or two
This decision changes your spacing, so make it at planting. Lifted after one winter, in early summer, each original bulb gives you roughly ten to fifteen bulbs of a decent size, plump enough to trim easily. Left in the ground a second year, the clump divides again and you lift thirty or more much smaller bulbs the following early summer. Neither outcome is a failure; they are two different products from the same planting.
If you want the larger single-year bulbs, six inches (15 cm) apart is right. If you already know you want the small, dense, second-year bulbs, plant eight to ten inches (20 to 25 cm) apart to give the clump two seasons of room, and expect to weed that wider bed more carefully in the first year while the plants are small.
Write down the planting date, the row position, the number of bulbs and their size going in. Bulb size at planting is the best single predictor of how many offsets you lift, and two seasons of that record tells you exactly which grade to keep back rather than eat.
