Overview

Beefsteak is the century-old heirloom that gave its name to a whole class of tomato. Indeterminate, regular-leaf vines bear ribbed red fruit of one to two pounds, and individual fruit has been recorded up to about 4 pounds. The thick, meaty slices are the reason restaurants use it on sandwiches and burgers, and it also stews and cans well. Vines are very vigorous, 6 feet or more, so give them a strong cage or wire frame and remove suckers to open up the canopy. Even watering at the root zone limits cracking and blossom-end rot, and harvest fully colored. It is common in the United States and includes strains such as Red Ponderosa and Coustralee. Wikipedia lists maturity at 96 days.
