Slugs inside the cover
A blanching mound or bin is close to a purpose-built slug habitat: dark, damp, sheltered from frost, and containing soft white stems with no fiber or pigment to defend them. Slug damage under a cover is faster and more destructive than anything that happens to udo in the open, and a shoot can be hollowed out in two or three nights.
The tell is a shoot with a smooth-edged cavity chewed into it low down, often with the stem still standing but collapsing when touched. You will usually find the culprits by pulling the mound back or lifting the bin, since they stay in the cover through the day.
Prevention is a matter of what you put the cover on. Clear every scrap of dead stem and old mulch off the crown before you build, use clean soil or fresh leaf mold rather than half-rotted material, and check the inside of a bin when you lift it to inspect progress. Where slugs are a persistent problem, ringing the crown with a barrier or bait before the cover goes on works far better than trying to intervene once the shoots are growing.
Shoots that rot before they reach usable length
Soft brown collapse at the base of a blanched shoot, without chewing damage, is nearly always a ventilation and moisture problem inside the cover. Warm still air against soft wet stems is the exact condition rot needs, and a sealed bin in a mild spring produces it reliably.
The fixes are all structural. Prop the rim of a bin half an inch (1 cm) off the ground on two small stones so air can move, use loose open material for a soil mound rather than packing wet clay around the shoots, and never wrap a cover in plastic sheeting or pile fresh manure against it for warmth. Udo does not need heat to force, and heat is what turns a cover into a rot chamber.
Clear rotted shoots out as soon as you find them rather than leaving them among the healthy ones. Soft tissue in contact with a sound stem spreads the problem across the whole crown within days.
Rot at the crown itself, as opposed to on individual shoots, usually traces to winter waterlogging rather than to the blanching cover. If shoots emerge weak and few from a crown that cropped well the year before, lift a section: healthy udo root is firm, pale and thick, while a rotted crown is brown, soft and smells sour.
Green tips and bitter stems
Green coloring on a shoot is a light leak, not a disease, and it is the most common disappointment in the first year of blanching. Green at the tip only means the shoot outgrew the cover: build taller next season, or cut sooner. Green streaking down one side of a stem means light entered from a fixed point, almost always a drainage hole in an upturned bin, a gap where the rim did not sit flush, or a crack in a soil mound that was not topped up.
Green through the whole shoot means the cover went on too late. The shoot had already broken the surface before it was covered, and no amount of darkness afterward reverses pigment already formed. Next season the cover must be built while the crown is still dormant and the ground is bare.
Bitter stems that are nonetheless white point at a different cause: shoots left too long after reaching full length, or a crown that has been repeatedly overcut and is producing thin fibrous growth from depleted reserves. Cut earlier, and give the crown a season of light picking with a good feed.

Wind, weight and summer collapse
The other major hazard has nothing to do with the crop and everything to do with the plant's size. Hollow stems reaching six to eight feet (180-240 cm) with a full leaf canopy catch wind like a sail, and a summer storm can lay a whole clump flat in an hour. A stem that snaps or tears at the base wounds the crown and removes leaf area the plant needed to rebuild reserves.
Stake early. Once the stems are two feet (60 cm) tall, drive three or four stakes around the crown and run twine between them at two feet and again at four feet (60 cm and 120 cm). Corral the clump rather than tying individual stems, which bruise easily. A stem that has already fallen can sometimes be lifted and tied back if it is only bent, but a snapped one should be cut off cleanly at the base.
Repeated collapse year after year is a siting problem rather than a staking problem. A crown in an exposed windy position will never crop as well as one with shelter, and the long-term answer is to move it during a dormant season.
When a crown stops earning its space
A crown that has produced well for years and then gives thin, few, or short shoots is usually not diseased. The three ordinary causes are age, overcutting and starvation, and they are distinguishable. Overcutting shows as a decline that started the season after a heavy harvest. Starvation shows as an overall reduction in summer stem height and count as well as in spring shoots. Age shows as a gradual decline over several seasons with a woody, congested center when you dig into it.
The response to all three is the same sequence: skip a season of cutting entirely, feed and mulch generously, and if the crown is more than about eight years old, lift it in the dormant season, split off firm outer sections with good buds, and replant them in freshly prepared ground. Discard the woody center.
None of this is easy to judge from a single spring, which is exactly why the record matters. Summer stem counts, maximum height, spring shoot numbers and how many you cut, kept for three or four seasons, make the pattern obvious: you can see a crown declining a full year before it produces a visibly poor crop, and act while the plant still has the reserves to recover.
