Tillers are the yield
A wheat plant does not grow like a vegetable. From the crown at soil level it throws side shoots called tillers, each of which can carry its own ear, and the number of tillers that survive to head is what determines how much grain the bed produces. One seed reliably gives three to six ears in a garden bed with room and light, which is why the sowing rate can look so heavy and still be right.
Winter wheat tillers twice: once in autumn before growth stops, and again during spring green-up when the crown wakes and pushes a second flush from the base. Spring wheat has only the one window and tillers less as a result, which is the reason it is sown a little more thickly. Neither type should be thinned. Thinning a wheat bed removes ears; it does not make the remaining plants larger.
Once the stem starts to extend, tillering is over. You can feel this happening: pinch a stem near the base between finger and thumb and you will find a hard swollen node an inch or two above the soil where before there was only soft leaf sheath. That is jointing, and from that point every management decision is about protecting the ears the plant has already committed to rather than encouraging more.
Keep off the bed once the crop is above ankle height. A trodden tiller does not recover, and a footprint through a stand at jointing is a permanent bald patch in a crop that has no way of filling gaps back in.
Nitrogen is the one input that matters, and the one that ruins it
Wheat responds to nitrogen more sharply than almost anything else in a garden, and a home grower working in a bed that has been composted for vegetables is usually starting with more of it than the crop wants. Excess nitrogen produces tall soft straw with weak lower internodes, dark blue-green leaves and a canopy so dense that mildew settles in it. That crop goes flat in the first summer thunderstorm, and grain that fills lying on wet ground is grain you lose.
The useful feed, if you give one at all, is a single light dressing at spring green-up when winter wheat restarts growth and is building its second flush of tillers. A scattering of a balanced fertilizer or a thin topdressing of well rotted compost is enough for a garden bed. After jointing, feeding does nothing good: the ear count is already fixed, and all the nitrogen can do at that point is soften the straw.
Phosphorus and potassium matter less in a garden that has been cropped normally, but potassium does stiffen straw, so a bed that lodged last season and has had plenty of nitrogen is a bed to give wood ash or a potassium feed rather than more compost.

Water: two moments decide the grain
For most of its life wheat is genuinely drought tolerant and a garden bed of it will go weeks without watering. Its roots go down two to three feet (60 to 90 cm) and it draws on moisture far below where a lettuce or a bean is looking. Watering an established stand out of habit does nothing except encourage disease in the canopy.
Two periods are different. The first is jointing, when the stem is extending and the ear is being formed inside the boot: drought here reduces the number of grain sites in the ear, and the loss is invisible until harvest. The second is grain fill, the two to four weeks between flowering and hard dough, when starch is being laid down: drought here gives thin pinched grain and a crop that threshes to far less weight than the ears suggested.
In both windows, if the top four inches (10 cm) of soil are dry and the leaves are rolling inwards along their length by midday, water thoroughly and infrequently. A deep soak once a week beats a daily sprinkle, which only wets the canopy and the surface. Water at the base in the morning so the leaves dry before evening, because a wheat canopy that stays wet overnight in warm weather is where rust and mildew begin.
Stop watering entirely once the straw begins to yellow. From then on the crop is drying down, and everything you can do to speed that is worth doing.
Lodging, and what to do once it has happened
Lodging is the crop going flat, either bending at the base or breaking, and in a garden it is the single most common way a wheat bed disappoints. It happens when heavy rain and wind hit a tall, soft, overfed stand carrying full ears, usually in the last month before harvest. Once down, the crop is hard to cut, dries badly, is found immediately by slugs and mice, and can sprout in the ear if it lies on wet soil.
- Cut back the nitrogen before it happens Most garden lodging is a feeding problem, not a weather problem. If your straw was over three and a half feet (about 1 m) tall and dark green, feed less next season and expect a shorter, stiffer, more productive stand.
- Sow slightly thinner in a rich bed A dense stand on fertile ground produces thin drawn stems competing for light. Widening the rows to eight inches (20 cm) in a bed you know is rich gives thicker straw that stands better through summer storms.
- Ring the bed with stakes and string before heading Four corner stakes with two rounds of twine at knee and waist height will hold a small block upright through weather that would flatten it. Put them in before the ears emerge, while you can still walk the bed safely.
- Lift lodged straw and prop it if the grain is still soft If it goes down at the milk stage there is still filling to do. Gather sections by hand, tie them into standing sheaves against a stake and get the ears off the soil. Grain will continue to fill in a propped sheaf.
- If it lodges near ripeness, harvest early A crop already at soft or hard dough that has gone flat will not improve. Cut it, stand it under cover to finish drying and accept slightly lower yield rather than risk sprouting, mold and mice.
Weeds, the straw, and what to record
Weeding matters only in the first two months. A wheat stand that closes over the row will shade out almost everything, but until it does, annual weeds compete hard and grassy weeds are almost impossible to pull without lifting the crop with them. Hoe between rows on dry days while you can still see soil, and after that leave the bed alone.
The straw is worth as much as the grain at this scale, and it is worth planning for. A few square yards of wheat gives an armful of clean, long, hollow straw for mulching strawberries, lining a potato trench, bedding out a compost pile or covering a seedbed. Cut it long and keep it dry and it stores for years.
Write down the date of spring green-up, the date you felt the first node at the base of a stem, and the date the first ears pushed clear of the boot. Note anything you fed and when. Those three dates and one line about the feed are what will tell you next season whether a flat crop was the weather or was you, and they are far more useful than a general note that the year went badly.
